This recipe is a one dish meal. It's so easy to throw together and the cooking time just depends on the kind of rice you use. The flavor is great and this is easy to modify should you need to.

Number Of Ingredients 11

1 lb smoked sausage
1 (14 ounce) can dark red kidney beans
1 (14 ounce) can light kidney beans
2 cups chicken broth (seasoned is best)
1 cup water
1/2 cup chopped red bell pepper
1/2 cup chopped onion
1/2 cup celery
2 tablespoons cayenne seasoning
2 teaspoons louisiana hot sauce, to taste
1 cup white rice (instant or not) or 1 cup brown rice (instant or not)

Steps:

  • Cut sausage into 1/2 inch pieces.
  • Lightly brown.
  • Add vegetables.
  • Simmer 5-7 minutes.
  • Add remaining ingredients and bring to a boil.
  • Reduce to simmer, cover with a tight fitting lid, and cook until rice is done.
  • **NOTE** The cayenne seasoning mentioned is NOT straight cayenne pepper. Try one of the seasonings such as Tony Cachere's or Emeril's cajun seasoning. Sorry for any miscommunication.

This easy-to-make recipe has been a staple in my recipe file for about 10 years. My husband and I both enjoy cooking it.

Number Of Ingredients 10

1/4 cup chopped green pepper
2 tablespoons onion, chopped
1 garlic clove, minced
1-1/2 teaspoons butter
1/4 pound fully cooked smoked sausage, cut into 1/2-inch slices
1 can (14-1/2 ounces) diced tomatoes, undrained
1 cup canned Ranch Style beans (pinto beans in seasoned tomato sauce), undrained
1/8 teaspoon dried oregano
1/8 teaspoon pepper
Hot cooked rice

Steps:

  • In a skillet, saute green pepper, onion and garlic in butter until crisp-tender. Add sausage; cook and stir until browned. Add the tomatoes, beans, oregano and pepper. , Bring to a boil. Reduce heat; simmer, uncovered, for 20-25 minutes or until thickened. Serve with rice.

COPYCAT POPEYES RED BEANS AND RICE RECIPE | TOP SECRET R…
I first created the clone for this Cajun-style recipe back in 1994 for the second TSR book, More Top Secret Recipes, but I've never been overjoyed with the results. After convincing a Popeyes manager to show me the ingredients written on the box of red bean mixture, I determined the only way to accurately clone this one is to include an important ingredient omitted from the first version: pork fat. Emeril Lagasse—a Cajun food master—says, "pork fat rules," and it does. We could get the delicious smoky fat from rendering smoked ham hocks, but that takes too long. The easiest way is to cook 4 or 5 pieces of bacon, save the cooked bacon for another recipe (or eat it!), then use 1/4 cup of the fat for this hack. As for the beans, find red beans (they're smaller than kidney beans) in two 15-ounce cans. If you're having trouble tracking down red beans, red kidney beans will be a fine substitute. SLOW COOKER RED BEANS AND RICE RECIPE - NYT COOKING
This slow cooker version of New Orleans-style red beans requires about 20 minutes to toss together in the morning and can be ready to eat when you walk in the door after work. Creamy and comforting, it is traditionally flavored with a leftover pork bone, so if you happen to have one, feel free to throw that in instead of a ham hock. And if you have a favorite Cajun or Creole spice mixture on hand, use 1 heaping tablespoon of it in place of the sage, cayenne, garlic, onion and paprika powders, and taste before adding any salt, as seasoning blends contain a varying amount of sodium. Adding hot sauce at the end is key: The best kind to use is a vinegary, cayenne-based, Louisiana-style sauce, like Crystal, Louisiana brand or Tabasco. (Here is a vegan version of this recipe.)
