For the best, juiciest pork tenderloin, sear the pork on all sides in a skillet before finishing in the oven. The spice blend you use is up to you; we love using a spicy steak spice blend or fresh herbs like rosemary and thyme. We love to serve this pork over polenta or mashed potatoes.

Number Of Ingredients 6

2 (1 to 1 1/2-pound) pork tenderloins (also called pork fillet)
Salt and fresh ground black pepper
2 tablespoons canola or vegetable oil
1 to 2 tablespoons seasoning blend/rub of your choice, fresh or dried
3/4 cup wine, broth, apple cider or a combination
1 tablespoon unsalted butter

Steps:

  • Heat oven to 425 degrees F. Trim each tenderloin of any silver skin (this can be tough when cooked. Use a small sharp knife and slide the blade under and outward to remove it). Pat pork dry with paper towels. Then generously season with salt and pepper.
  • Heat a tablespoon of oil in a large cast-iron skillet or heavy-bottomed oven-safe frying pan over medium heat. Add the pork tenderloins and cook, occasionally turning, until browned all over, about 2 minutes per side. Scatter the seasoning blend or herbs over the pork.
  • Roast 10 to 15 minutes or until an internal thermometer inserted into the thickest part registers between 145 and 150 degrees F.
  • Transfer pork to a large plate and cover with aluminum foil. Let rest about 10 minutes. While pork is resting, place the skillet back over medium heat. Add the apple cider and simmer until reduced by half. Add butter then serve drizzled over pork.

2 tbsps packed brown sugar
1 tsp McCormick® Paprika
1 tsp McCormick® Rosemary Leaves crushed
1/2 tsp McCormick® Garlic Powder
1/2 tsp salt
1 pork tenderloin about 1 pound
2 tbsps olive oil divided
2 medium apples cored and cut into thin wedges
1 medium onion cut into thin wedges

Steps:

  • Preheat oven to 425°F. Mix brown sugar and seasonings in large bowl. Reserve 1 tablespoon. Brush pork tenderloin with 1 tablespoon of the oil. Sprinkle with remaining seasoning mixture. Place in center of large foil-lined shallow baking pan.
  • Toss apples, onions and remaining 1 tablespoon oil in medium bowl. Add reserved seasoning mixture; toss to coat well. Spread around pork in pan.
  • Roast 25 to 30 minutes or until pork is desired doneness. Slice pork and serve with apples and onions.

  • Preheat oven to 400°. Place potatoes in a 9”-x-13” baking dish and drizzle with 2 tablespoons oil and season with salt and pepper. Roast until starting to turn golden, about 40 minutes.  Season tenderloin with salt and pepper all over, then place on top of potatoes.  In a small bowl, whisk together remaining 1/4 cup oil, maple syrup, garlic, mustard, rosemary, and red pepper flakes. Season with salt and pepper then brush over tenderloin and pour any extra over the potatoes.  Roast for another 20 minutes or until potatoes are tender and tenderloin is cooked through. Internal temperature should read 145°.  Garnish with more rosemary to serve.
