Salt and Vinegar Roasted Chickpeas image

1 Can Chickpeas Rinsed and drained
1 Cup White Vinegar
1 Tbsp Oil
1/2 tsp Sea salt

Steps:

  • "Place chickpeas in small saucepan pan and cover with vinegar. Simmer for 20 minutes. Remove from heat. Let stand for 30 minutes. Preheat oven to 400 degrees. Drain chickpeas, removing any loose skins. Pat dry with paper towels. In a bowl, toss with oil, salt and a splash of vinegar. Spread onto sheet pan. Place in oven and bake for about about 40 minutes until dry and lightly brown, stirring every 15 minutes."
