These Chicken Tostada's are a great take on an old favorite. You can take some short cuts and have these ready to serve quickly and easily. You'll love the flavors, and anyone who tastes these Tostada's is sure to love them as well. You can add some of your favorite flavors if you want to, and make these fit what your family loves

Number Of Ingredients 11

2 - 3 cups of shredded chicken breast (you can use Rotisserie - or store bought deli chicken)
1 box of Tostada shells
1/2 cup of salsa
1 can of pinto beans - drained and rinsed
8 ounces of shredded cheddar cheese
1 Avocado - pitted and mashed
1 lime - juiced
1 teaspoon of taco seasoning
1 -2 cups of shredded lettuce
salt
pepper

Steps:

  • Preheat the oven to 400 degrees. In a bowl, mix together the chicken, salsa, and pinto beans. Place the Tostada shells on a baking sheet lined with parchment paper. 
  • Top each shell with 2 Tablespoons of the chicken mixture, and 1 Tablespoon of cheese. Bake for 5 minutes, or until the cheese is melted and bubbly. 
  • Remove the Tostada's from the oven, and set aside. Mash the avocado with lime juice, and 1 teaspoon of taco seasoning, salt, and pepper. 
  • Top each Tostada with a spoonful of avocado, and shredded lettuce.
  •  Serve immediately. Enjoy

8 6-inch flour or corn tortillas
2 avocados, pitted, cut into 1/2-inch chunks
1 tablespoon lime juice
½ teaspoon salt
1 cup fat-free refried beans
2 cups shredded cooked boneless, skinless rotisserie chicken
1?½ cups shredded pepper Jack (about 4 oz.)
2 cups shredded romaine lettuce
1 cup tomato salsa

Steps:

  • Preheat oven to 400ºF. Line a baking sheet with heavy-duty foil. Mist both sides of tortillas with cooking spray. Place on sheet and bake until crisp, about 8 minutes.
  • Toss avocado with lime juice; season with salt. Spread some beans on each tortilla, top with chicken and avocado. Sprinkle with cheese. Return to oven and bake until warmed through, 7 to 10 minutes. Top with lettuce and salsa and serve immediately.
