It’s easy, it’s cheesy, and it requires no special equipment—what’s not to love? This slow cooker take on cheese fondue offers all of the nuanced flavor of traditional fondue along with all of the convenience of the crockpot; basically, it’s perfect for entertaining. Tossing the cornstarch with your grated cheese helps the cheese incorporate evenly into the liquid when melting and prevents clumping. Serve with a platter of your favorite roasted veggies, sausages, and bread cubes, using long skewers for dipping.

Yield Makes 4 cups (serving size: about 1/2 cup)

Number Of Ingredients 9

1 (12-oz.) can evaporated milk
½ cup dry white wine
1 garlic clove, smashed
10 ounces Gruyère cheese, shredded (about 3 1/2 cups)
10 ounces Swiss cheese, shredded (about 3 cups)
1 tablespoon cornstarch
1 tablespoon fresh lemon juice (from 1 lemon)
Black pepper
Smoked sausage, roasted vegetables, cubed bread, apple slices, grapes, for serving

Steps:

  • Stir together evaporated milk, wine, and garlic in a 1 1/2-quart slow cooker. Cover and cook on high, until hot, about 10 minutes.
  • Meanwhile, toss together Gruyère, Swiss, and cornstarch in a medium bowl. Add cheese mixture and lemon juice to cooker. Cover and cook, stirring every 5 minutes until cheese is just melted, about 45 minutes. (Be careful not to overcook or fondue will seize.)
  • Reduce cooker to warm. Sprinkle with pepper. Serve with smoked sausage, roasted vegetables, cubed bread, apple slices, and grapes.

1/4 cup butter (or margarine)
1/4 cup flour
1/2 teaspoon salt (optional)
1/4 teaspoon pepper
1/4 teaspoon ground mustard
1/4 teaspoon Worcestershire sauce
1 1/2 cups milk
2 cups shredded cheddar cheese

Steps:

  • IN a saucepan melt butter.
  • Stir in flour, salt if desired, pepper, mustard and Worcestershire sauce until smooth.
  • Gradually add milk.
  • Bring to a boil, cook and stir 2 mins or til thickened.
  • Reduce heat.
  • Add cheese.
  • Cook and stir til melted.
  • Transfer to crock pot.
  • Keep warm on LOW.
  • Serve with bread, ham, sausage or broccoli.
