Berry Cobbler is such a warm and melty treat packed with fruity flavors. An easy summer dessert that’s perfect with a scoop of ice cream.

3 cup Blueberries
2 cup Raspberries
2 cup Blackberries
1 1/4 cup Sugar (divided)
2 tbsp Cornstarch
1 tsp Lemon Juice
1/3 tsp Vanilla
1 1/2 cup Flour
2 1/4 tsp Baking Powder
3/4 tsp Salt
1 1/2 cup Milk

Steps:

  • Preheat oven to 350.
  • Grease a 9x13" Baking dish and set aside.
  • Place all of the berries in a large bowl.
  • Add 1/4 cup sugar, the cornstarch, lemon juice and vanilla. Toss to coat.
  • Transfer mixture to prepared baking dish.
  • In another bowl, whisk together remaining sugar, flour, baking powder and salt.
  • Add in milk slowly while whisking.
  • Pour batter evenly over berries in baking dish.
  • Bake for 55-60 minutes until top is golden brown.

1-1/4 cups all-purpose flour, divided
2 tablespoons plus 1 cup sugar, divided
1 teaspoon baking powder
1/4 teaspoon ground cinnamon
1 large egg
1/4 cup fat-free milk
2 tablespoons canola oil
1/8 teaspoon salt
2 cups fresh or frozen raspberries, thawed
2 cups fresh or frozen blueberries, thawed
Low-fat vanilla frozen yogurt, optional

Steps:

  • Whisk together 1 cup flour, 2 tablespoons sugar, baking powder and cinnamon. In another bowl, whisk together egg, milk and oil; add to dry ingredients, stirring just until moistened (batter will be thick). Spread onto bottom of a 5-qt. slow cooker coated with cooking spray., Mix salt and the remaining flour and sugar; toss with berries. Spoon over batter. Cook, covered, on high until berry mixture is bubbly, 1-3/4 to 2 hours. If desired, serve with frozen yogurt.

Good. But the original is too sweet for me who has diabetes. I reduced sugar to 3/8ths for the cake part and to 1/4 cup for the berry part. I also used three cups of frozen berries (berry mix of blackberries, blue berries, and raspberries) instead of just 2 cups. The berry part came out watery. Maybe it was from using frozen berries?
