Secret ingredient is Durkee's Famous Sauce. Just can't have a potluck, reunion, picnic or guests for dinner without deviled eggs!! Secret to successful stuffing?...mash yokes good and beat until fluffy. Secret to having enough stuffing in eggs?...boil 1 or 2 extra eggs and this also allows for any egg which tears in peeling or in stuffing.

6 hard-boiled eggs
4 tablespoons mayonnaise
1 teaspoon Durkee's sauce
2 teaspoons pickle relish
salt
pepper
paprika

Steps:

  • Boil 6 eggs until hard boil stage and allow to cool. (May boil 1 or 2 extra eggs to allow for larger amount of stuffing and for substitution of torn eggs in peeling.) After removing from heat place in cold water so egg white will not become discolored.
  • Peel and cut into halves. Place yokes into small bowl and mash out all lumps. Beat yokes by hand until fluffy.
  • Add mayonnaise, Durkee's famous sauce, pickle relish, salt and pepper. Stuff eggs. Sprinkle top with paprika.
  • Note: Durkee Famous Sauce is a sandwich and salad sauce with a tangy, mustard-mayonnaise flavor. Can be found in most grocery stores.

Over the years, I have perfected this deviled egg recipe. It is always a hit where ever I go and I bring home an empty plate.

12 - hard boiled eggs
12 - spanish olives
1/2 teaspoon(s) onion powder
1 teaspoon(s) celery seed
1/2 teaspoon(s) salt and pepper
- paprika
1/2 cup(s) real mayonnaise (not salad dressing)
1/4 cup(s) durkee famous sandwich & salad sauce

Steps:

  • Slice each hard boiled egg in half length-wise and pop the yolk into a bowl.
  • Line up the white part of the eggs on a plate and set aside.
  • Mash all the eggs yolks with a fork until fine crumbled.
  • Add the onion powder, celery seed, salt & pepper to the yolks. Add the mayonnaise and Durkee sauce. Mix well.
  • Fill the holes in the whites with teaspoonfuls of the yolk mixture until all the yolk mixture is evenly divided between the eggs.
  • Slice the olives in half and top each yolk mixture with half an olive cut side up. Sprinkle with paprika and refrigerate until ready to serve.
