My mother was one of the best cooks I ever knew. When she made stews we mostly found dumplings in them. We never ate things from packages or microwaves and you sure could taste what food was. That's the only way I cook today - I don't use any electronic gadgets to cook with except an electric stove.

Yield 6 dumplings

Number Of Ingredients 6

1 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon white sugar
½ teaspoon salt
1 tablespoon margarine
½ cup milk

Steps:

  • Stir together flour, baking powder, sugar, and salt in medium size bowl. Cut in butter until crumbly. Stir in milk to make a soft dough.
  • Drop by spoonfuls into boiling stew. Cover and simmer 15 minutes without lifting lid. Serve.
  • To make parsley dumplings, add 1 tablespoon parsley flakes to the dry ingredients.

500 grams Pastry flour
1 egg
water
60 grams butter
500 grams potatoes (cooked and mashed)
150 grams Feta
2 onions
freshly ground peppers
salt
2 tablespoons butter

Steps:

  • For the dough, mix all the ingredients, add enough water until the dough holds together and knead to a smooth dough. Roll out the dough into a thin sheet and cut out circles from it using a drinking glass. For the filling, peel the onions, chop and fry in a pan in a little oil until light brown.
  • Crumble the feta into small pieces. Mix the mashed potatoes with half of the fried onions and feta cheese, and season heavily with salt and pepper.  Place some of the filling over each dough circle and fold the dough into a semicircle to form the dumplings. Squeeze the edges firmly.
  • Cook the dumplings in plenty of boiling salted water for about 15 minutes until tender. Melt a little butter. Lift out the dumplings with a slotted spoon and serve with remaining fried onions and a little melted butter immediately.
