Duke's Classic Roasted Turkey – Duke's Mayo image

Number Of Ingredients 9

1 turkey (18 lbs. or under)
1 large red onion, quartered
1 large carrot, chopped
1 celery rib, chopped
1 lemon, quartered
1 head of garlic, halved
1 cup Duke's Mayonnaise
1 Tbsp. poultry seasoning
Salt and black pepper to taste

Steps:

  • Preheat oven to 450°F.
  • Place turkey on rack in large roasting pan.
  • Place cut vegetables, lemon, and garlic inside the turkey cavity.
  • Season the turkey skin generously with salt and pepper.
  • In a small bowl, mix the mayonnaise and poultry seasoning.
  • Rub the mixture on the turkey and place the turkey in the oven.
  • Reduce the temperature to 350°F.
  • Roast turkey until a thermometer inserted into the thickest part of the thigh registers 165°F, about 21/2 hours.
  • 9. Transfer the turkey to a platter and tent with foil. Let stand at room temperature 30 minutes before carving.

I made this last year out of the blue, and my whole family enjoyed it. We had never had duck before, and it was a nice exchange for the traditional turkey. We served it with all the usual side dishes.

2 teaspoons salt
2 teaspoons paprika
1 teaspoon black pepper
1 (5 pound) whole duck
½ cup melted butter

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Rub salt, pepper, and paprika into the skin of the duck. Place in a roasting pan.
  • Roast duck in preheated oven for 1 hour. Spoon 1/4 cup melted butter over bird, and continue cooking for 45 more minutes. Spoon remaining 1/4 cup melted butter over duck, and cook for 15 more minutes, or until golden brown.
