This is Russell's speciality. This soup is easy to make, though it takes a bit of planning. It is a complete and filling meal made the way we do. The original recipe came from an Ian Parmenter cookbook, but I doubt he'd recognise his recipe now! Prep and cooking time are just a guess-and don't include overnight refrigeration of the stock or marinated meat-sorry about that! I like to add snow peas or asparagus to this sometimes too.

Number Of Ingredients 22

1 1/2 kg duck, breasts filleted and legs removed
1 (375 g) can chicken consomme
water (see step #4)
3 tablespoons soy sauce
2 tablespoons mirin
3 garlic cloves, crushed
1 medium onion, roughly chopped
1 cinnamon stick
1 whole star anise
1 teaspoon szechwan pepper, lightly crushed
2 tablespoons soy sauce
1 tablespoon mirin

3 -4 green onions, finely sliced
1 cup bean sprouts
2 cups cooked noodles (Hokkien are good)
100 g button mushrooms, halved and cooked
ginger, finely julienned
1 tablespoon thai-style sweet chili sauce

Steps:

  • Mix the ingredients of the marinade, and add the breast fillets and legs.
  • Refrigerate overnight.
  • To make the stock, put carcass portions and other stock ingredients into a large saucepan.
  • Add water to cover and bring to the boil.
  • Simmer gently for 45 minutes.
  • Strain, return stock to a clean pot and reduce over medium heat for 15 minutes.
  • Remove any remaining meat from the carcass and reserve.
  • Cool reduced stock, and refrigerate overnight.
  • When stock is cold, skim fat from the surface.
  • The stock is ready for use.
  • For the duck portions: remove from marinade, and cook in a hot oven (about 200c) for about 20 minutes for the breasts, and about 30 minutes for the legs.
  • You want the meat to be pink and juicy still, and the skin crispy.
  • Cool a little then shred the meat.
  • For the soup: Put stock in a large saucepan and bring to the boil.
  • Reduce heat, and add remaining soup ingredients including both lots of reserved duck meat.
  • Warm through and season to taste.

7 radishes, thinly sliced
Juice 2 limes
2 tbsp sesame oil
1 garlic clove, crushed
1 thumb-size piece fresh ginger, finely grated
300g shredded mock duck – we used Linda McCartney Vegetarian Shredded Hoisin Duck
180ml hoisin sauce
2 tsp rice wine vinegar
600g frozen ramen noodles or 400g dried noodles
2 spring onions, thinly sliced
1 large carrot, julienned
½ cucumber, cut into thin matchsticks
4 medium free-range eggs, soft-boiled and peeled (optional)
2 tbsp toasted sesame seeds and chilli oil to serve

Steps:

  • Mix the radishes in a bowl with the lime juice and a pinch of salt. Set aside to lightly pickle.
  • Heat the oil in a non-stick frying pan over a medium heat. Add the garlic and ginger and fry for 1 minute. Stir in the mock duck, hoisin, vinegar and 100ml water, then bring to a simmer. Set aside.
  • Cook the noodles according to the pack instructions. Toss the noodles with the sauce and duck, then pile into 4 ramen-style bowls. Top with the spring onions, carrot, cucumber, drained radishes and an egg (if using). Serve sprinkled with the sesame seeds and chilli oil if you like

  • For the sauce: In a small bowl, mix the cornstarch with 1 tablespoon cold water and set aside. Next, heat a pan or wok over medium heat and add the hoisin, sugar, sesame oil and soy sauce. When the sauce starts to bubble slightly, add the cornstarch mixture and stir well to thicken. Set aside and let cool. Carve and slice some duck. Place a teaspoon of the sauce in the center of each pancake, add a couple slices of duck, garnish with the scallions and cucumbers and serve immediately.

Russ and I love duck and I love to make stock with the remaining carcass, wing tips and that big neck. I remove the skin from the neck. We mostly eat marinated Asian style duck, so I pop the wings and neck in the marinade and then bake them alongside the bird for a while. I also strain off the fat and cooking juices and after removing the layer of fat, add the jellied juices to my stock. I use the stock for noodle soup for the two of us.
