1 ready to cook duck leg (2 kg)
1 teaspoon ground ginger
5 tablespoons honey
1 teaspoon Szechuan pepper
0.5 teaspoon Chinese 5 spice powder
1 teaspoon salt
1 tablespoon soy sauce
1 tablespoon sesame oil
2 tablespoons Rice wine

Steps:

  • Rinse duck and pat dry. Rinse once with boiling water, dry thoroughly and allow to dry at room temperature for about 1 hour. Tie with a kitchen string. Mix all spice ingredients in a bowl. Rub duck with 2/3 of the spice mixture and wrap in plastic wrap, refrigerate for about 12 hours. 
  • Preheat the oven to 220 ° C top and bottom heat Preheat.
  • Place duck, breast side down, on the grill, fill roasting pan with a little warm water and slide underneath. Roast duck in preheated oven at 220°C (approximatley 475°F) for about 45 minutes. Turn over and roast for 45 minutes more. Brush with remaining spice mixture to make duck crispy. Remove from oven and cut into serving pieces. 
  • If desired, serve with rice and fried bok choy.

1 duck leg (2.5-3 kg)
2 red onions (peeled, halved)
4 garlic (peeled, coarsely chopped)
5 centimeters Galangal (peeled)
2 Lemongrass
2 teaspoons Mace
2 teaspoons colorful peppers
1 teaspoon Turmeric
1 teaspoon Coriander
1 teaspoon ground Cardamom
1 teaspoon salt
2 fresh red chile peppers
2 teaspoons Fish sauce
3 tablespoons soy sauce

Steps:

  • Combine all marinade ingredients in a blender and puree.
  • Saute marinade mixture in a dry pan briefly, allow to cool slightly.
  • Rub duck inside and out with cooled marinade.
  • Wrap duck in an oiled aluminum foil and refrigerate for 2 hours.
  • Place wrapped duck in a roasting pan with a wire rack and poke holes in the bottom of the foil so that fat can drain out. 
  • Place duck into preheated oven at 220°C (approximately 425°F), pour a little water in the pan and roast for 30 minutes. Reduce temperature to 170°C (approximately 325°F) and continue roasting for about 3-4 hours. Make sure that there is always water in the pan.
  • Remove duck from the oven, let cool slightly and open the foil. Remove excess marinade.
  • Roast duck until crispy and browned at 270°C (approximately 500°F), watching carefully. Remove from oven, carve and serve.
