After you have dried sweet corn here is a good recipe to prepare it for the table.

Number Of Ingredients 6

1 cup(s) dried sweet corn
2 cup(s) water
1/2 teaspoon(s) salt
1 tablespoon(s) honey or sugar
- pepper to taste
2-4 tablespoon(s) butter

Steps:

  • Soak dried corn for 2 hours in water in a saucepan. Do NOT drain. Cover and cook slowly until the kernels are tender (50 to 60 minutes). Correct seasonings if desired. Add butter. Serve in sauce dishes, broth and all. If you like, add two tablespoons milk. Serves four to six.

1 (7.5 ounce) package Cope's dried corn
3 cups milk
1/2 cup heavy cream
1 Tablespoon granulated sugar
1 1/2 teaspoon salt, or to taste
2 Tablespoons butter
Ground black pepper

Steps:

  • Place dried corn in a large bowl and cover with milk and heavy cream. Cover with plastic wrap and refrigerate a minimum of 4 hours, but preferably overnight.
  • Transfer corn mixture to a large saucepan. Add sugar, salt, and butter. Bring to a boil, stirring frequently, over medium-high heat, then reduce heat to low and simmer, stirring occasionally, for about 30 to 35 minutes. Adjust seasoning to taste with salt and freshly ground black pepper. Serve hot or hold warm over low heat until ready to serve.
