3/4 cup flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup pitted dates, chopped (Dromedary brand preferred)
1 cup coconut, shredded (or 1/2 cup chopped nuts)
2 eggs
1 cup brown sugar

Steps:

  • Preheat oven to 350F and grease a 13 x 9 cake pan very well.
  • Sift the dry ingredients together into a large mixing bowl.
  • Mix in the dates and coconut or nuts.
  • In a separate bowl, beat the eggs until foamy and gradually add the brown sugar.
  • Add wet mixture to the dry ingredients.
  • Spread batter in prepared pan to a depth of about 1/2 inch.
  • Bake for 30 to 40 minutes.
  • When done, cut into 4" x 1" bars.
  • Remove from pan while still warm.

1-1/4 cups sifted all-purpose flour
1/3 cup granulated sugar
1/2 cup butter or margarine
1/3 cup light brown sugar, packed
1/3 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
2 tablespoons all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1 cup chopped Diamond Walnuts
8 ounces Dromedary Pitted Dates, snipped, or Dromedary Chopped Dates
Powdered sugar

Steps:

  • Start by making the Pastry Layer: 1-1/4 cups sifted all-purpose flour; 1/3 cup granulated sugar; and 1/2 cup butter or margarine.
  • Combine flour, sugar and butter and blend to fine crumbs.
  • Pack into bottom of greased 9-inch square pan.
  • Bake at 350 F about 20 minutes, until edges are lightly browned.
  • Now for the top layer: Combine the sugars, eggs and vanilla, and beat together well.
  • Sift flour with baking powder, salt and nutmeg, and add to first mixture.
  • Stir in Diamond Walnuts and Dromedary Dates.
  • Turn batter into pan over hot baked pastry layer.
  • Bake at 350 F about 20 minutes longer.
  • Cool in pan, sprinkle top with powdered sugar, then cut into bars.

Make sure you drain them before mixing them in with the nuts.)4. Sift the flour, salt, and baking powder into a bowl. Set aside.5. Mix the remaining 1 1/4 cup melted butter and sugars until well incorporated. 6. Add the eggs one at a time, mixing well after each addition.7. Add in the vanilla.8.
