Steps:
- Measure out the gin, lime juice and simple syrup into a cocktail shaker with ice. Shake for a count of 10. Strain into a coupe glass and garnish with cucumber ribbon.
- For the cucumber, use a peeler to cut thin flat ribbons lengthwise from the cucumber. Thread onto 6" bamboo skewer and place atop cocktail.

- In a cocktail shaker, gently muddle the basil leaves with the lime juice, then add the gin, Simple Syrup and celery bitters. Fill the shaker with ice and shake well. Fine strain into a chilled martini glass and garnish with the basil sprig.

I was looking for a drink that uses celery bitters to great effect that wasn't a Bloody Mary, and I stumbled on this one. I would have never imagined a Celery Daiquiri would taste good, but the bright crisp flavour from the celery compliments the lime from the daiquiri very well. Add all ingredients to a cocktail shaker with ice.
