Super great Savory Snack--Homemade five spice meat floss.

300 g pork sirloin or tenderloin
2 green onions cut into short sections
5 slices of ginger
10 Sichuan peppercorn seeds
1 star anise
1 tablespoon light soy sauce
1 tablespoon light soy sauce
1 tablespoon oyster sauce
1 teaspoon Chinese five spice powder or as needed
1 tablespoon cooking oil ( , olive oil)

Steps:

  • Wash the pork and then cut into larger chunks around 3 to 4 cm.
  • Cook them in boiling water for around 5 minutes to remove the impurities. Transfer out and wash again.
  • In high pressure cooker or a large pot, add ginger, green onion, star anise, soy sauce and Sichuan peppercorn and pork; pour enough water to cover the pork meat. Add 1 tablespoon of light soy sauce too. For high pressure cooker, cook for around 20 minutes until the pork is soft. If you use pot to simmer, simmer them for 40 minutes and add slightly more water (3 cm higher) and check the water level from time to time. Add hot water if necessary (make sure the pork is covered with water).
  • Transfer out and cool down; finely shredded by hand.

Quick and easy to bake this savoury and sweet chiffon cake with meat floss (pork or chicken) layered in between and topped with a spread of mayonnaise and sprinkle of meat floss

70 g cake flour or plain flour
2 tbsp corn flour (corn starch) (about 15g)
3 egg yolks (used large eggs)
25 g caster sugar
80 ml fresh milk
55 g corn oil
1/2 tsp vanilla extract
meat floss (for sprinkling)
4 egg whites
1/8 tsp salt
50 g caster sugar

Steps:

  • Preheat oven at 170 deg C. Sift flour and corn flour together into a bowl. mix well and set aside.
  • Combine egg yolks and sugar in another bowl, mix well with a rubber spatula. Add milk, mix well followed by oil and blend well again. Sift in flour mixture the second time into egg mixture and stir well.
  • Meringue - Beat egg whites and salt until foamy with an electric mixer. Gradually add in sugar and beat until egg whites are glossy, with stiff peaks. Fold the egg whites in the egg batter in 3 batches with a rubber spatula.
  • Pour 1/4 of the batter into into a 17cm tube pan, sprinkle meat floss over it. Then pour in the remaining batter on top. Bake at 2nd lower rack in the preheated oven for about 40 minutes.
  • When the cake is done, remove from oven and turn the pan over. Leave cake to cool in pan.
  • Remove cake from pan. Spread some mayonnaise one top of cake and sprinkle more meat floss and toasted white sesame seeds over it.
