How To Make Lemongrass Tea With Ginger Like In Thailand image

This Thai lemongrass drink recipe is very easy to make and is great for cooling you down. Lemongrass drinks have plenty of health benefits too. Refreshing and with a lovely mild citrus taste it makes a great helthy drink alternative.

8 cups water
4 cups lemongrass (roughly chopped)
1/4 cup sugar
1/2 cup mint leaves
1/2 cup lemon basil leaves
1/2 oz ginger (finely julienned)
1 lime juiced (optional)

Steps:

  • Remove the ragged tops of the lemongrass leaves and any discolored outer leaves. Cut off the very bottom of the white root top.
  • Roughly slice the lemongrass leaves.
  • Wash the mint and lemon basil and pull off the leaves.
  • If using fresh ginger root, scrape to peel the outer layer of skin and julienne into thin sticks. Ginger adds a slightly hot, mild spicy taste which you will need to adjust to your taste, working up from the suggested 1/2 ounce if you fancy a little more spicy taste.
  • Boil the water in a medium saucepan big enough to hold all the ingredients. Add the lemongrass, ginger, mint and lemon basil and reduce heat to simmer. Simmer for 10 minutes.
  • After simmering turn off the heat, add in the sugar and stir to dissolve.
  • Allow to cool for at least 20 minutes before serving over a glass of ice or refrigerating for later use.
  • Optionally stir in the juice from 1 lime and stir in for a slighlty sharper taste.

This tea I first had in Bali. It is refreshing and delicious hot or cold. Easy to make if you can find the lemongrass however most Asian markets should carry it. My mother who is diabetic loves the natural flavor of the lemongrass without the sugar. Be careful about adding the ginger as it will give an almost "hot and spicy" flavor to the tea! Try the tea without first and then next time try it with the ginger.

Number Of Ingredients 4

4 stalks lemongrass
1 liter water
4 teaspoons sugar or 4 teaspoons honey (very optional)
3 slices fresh ginger, peeled 1/4 inch slices (optional)

Steps:

  • Boil 1 liter water.
  • While the water is boiling, clean the stalks of lemongrass under running water then cut and discard the green upper part of the stalks, you only want to use the whitest part.
  • Next, using a meat tenderizer or hammer of any sort gently smash the stalks on your cutting board.
  • Place the smashed stalks of lemon grass inside the tea pot along with the peeled ginger if you decide to use it.
  • Pour the boiling water over and allow to steep for 5 minutes.
  • Pour into tea cups and serve with or without sweetener (the honey or sugar).
  • In Bali, this"tea" would not be served with sugar, it tastes fabulous just as it is.
  • Tip: As with iced tea, this"tea" can be served cold.
