Thai Stir-fried Glass Noodles (Pad Woonsen) - Marion's Kitchen image

This may not be the most traditional Thai noodle dish, but it certainly ticks all the boxes to become a new family favourite! Translucent glass noodles really soak up that rich, umami-laden stir-fry sauce to create a sensational mid-week meal in minutes.

Number Of Ingredients 17

200g chicken thighs, cut into bite-sized pieces
160g dried glass noodles (also known as mung bean, cellophane, bean thread noodles)
2 tbsp vegetable oil
3 garlic cloves, finely chopped
1 onion, sliced
2 eggs, lightly whisked
½ cup shredded carrot
1 large mild red chilli, deseded and sliced
3 spring onions (scallions), cut into batons
Marinade:
1 tsp fish sauce
¼ tsp ground black pepper
Stir-fry sauce:
2 tbsp oyster sauce
2 tbsp fish sauce
½ tsp dark sweet soy sauce
½ tsp sugar

Steps:

  • Combine the chicken with the marinade ingredients and set aside while you prepare the noodles. Place the noodles in a large bowl and cover with warm but not boiling water. Allow to soak for 8-10 minutes or until just tender. Drain and set aside for later. For the stir-fry sauce, combine the ingredients in a small bowl. Heat half the vegetable oil in a wok or large frying pan. Add the garlic and the onion and stir-fry for a minute. Add the chicken and stir-fry for another 2-3 minutes or until the chicken is almost cooked. Add the carrot and stir-fry for another minute or until the chicken is cooked. Spread the ingredients out to make some space in the middle of the pan. Add the remaining oil into the space, then pour in the eggs. Spread the eggs out and allow them to set before breaking them up and tossing them through the rest of the ingredients. Add the noodles and the stir-fry sauce and toss until well combined. Then toss through the chilli and spring onion. Divide the noodles among plates and serve.

½ pound Korean dang myun noodles
1 teaspoon sesame oil
2 tablespoons soy sauce
2 teaspoons white sugar
1 tablespoon vegetable oil
2 cloves garlic, minced
¾ cup thinly sliced onions
2 carrots, cut into match-stick size pieces
½ pound asparagus, thinly sliced
3 green onions cut into 1-inch pieces
½ cup dried shiitake mushrooms, soaked until soft, then sliced into strips
1 tablespoon sesame seeds
1?½ teaspoons sesame oil

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the dang myun noodles, and return to a boil. Cook the noodles uncovered, stirring occasionally, until the noodles have cooked through, but are still firm to the bite, 4 to 5 minutes. Rinse with cold water and drain well in a colander set in the sink. Toss noodles with 1 teaspoon of sesame oil. Set aside. Whisk soy sauce and sugar in a small bowl. Set aside.
  • Heat the vegetable oil in a skillet over medium-high heat. Stir in the garlic, onion, carrots, and asparagus; cook and stir until the vegetables have softened, about 5 minutes. Stir in green onions and shiitake mushrooms and continue cooking and stirring for 30 seconds. Pour in the soy sauce mixture, then add the noodles. Cook and stir until the noodles are warmed through, 2 to 3 minutes. Remove from heat and toss with sesame seeds and the remaining 1 1/2 teaspoon of sesame oil.

  • To Prep Soak the glass noodles in water for 8-10 mins and drain in colander. Put all the seasoning mix ingredients in a bowl and mix them until the sugar has dissolved. Put it aside. Put 1.5l of water in a pot and put on the stove and bring it to boil. Then cook the glass noodles for about 1 min until the noodles have cooked through. Take the noodles out and quick rinse them with fresh water to stop them cooking then drain in a colander. Cook the squid and prawns for about a min until the squid is just cooked and the prawns turn pink - do not overcook them. Then take the squid and prawns out and put them into a large bowl. Put the cooked glass noodles into the same bowl of cooked squid and prawns. Then, pour all of the seasoning mix into the bowl followed by spring onions, lemongrass, mint, red onions and coriander. Mix thoroughly. Taste and adjust to your liking. Put the glass noodle salad into a bowl and top with toasted sesame seeds and add some sliced fresh chilli.
