Cider-Glazed Chicken with Dried Cranberries Recipe image

Spoon the cranberries and the glaze left in the pan over the chicken. Serve with wild or white rice.

1?½ tablespoons all-purpose flour
¾ teaspoon salt
¼ teaspoon ground allspice
4 (6-ounce) skinless, boneless chicken breast halves
1 tablespoon butter
? cup dried cranberries
½ cup apple cider or apple juice
1 tablespoon cider vinegar or white balsamic vinegar

Steps:

  • Heat a large nonstick skillet over medium heat. Combine first 3 ingredients in a zip-top plastic bag. Add the chicken to bag; seal and shake to coat.
  • Melt butter in pan. Add chicken, and cook 4 minutes. Turn chicken over. Add cranberries and remaining ingredients; cook 5 minutes or until chicken is done.

10 pieces chicken breasts (skinless)
15 ounces whole berry cranberry sauce (1 can)
3/4 ounce dry onion soup mix (1 envelope)
8 ounces Catalina dressing (fat free)
fresh rosemary, a few needles from the sprig (optional)
1/4 cup dried cranberries (optional)

Steps:

  • Preheat oven to 350°F
  • Mix onion soup, whole cranberry relish and Catalina salad dressing together in a bowl.
  • Place chicken breasts in the bottom of the baking dish and pour the cranberry mixture over the chicken. Sprinkle a little fresh rosemary and dried cranberries over the chicken, if desired.
  • Cover the dish and bake for 45 minutes. Remove the cover and bake an additional 15-20 minutes. Serve.
