flour - 1 1/5 cups (300 g)
powdered sugar - 2/3 cup (150 g)
coconut - 5 oz (135 g) coconut
butter - 2/5 cup (100 g) soft
dried fruits - 3.5 oz (100 g)
rum - 2 tbsp. dark
eggs - 1
milk - 2 tablespoons
salt - a pinch

Steps:

  • Mix the chopped dried fruit with the flour, coconut and salt.
  • Separately beat the butter with the icing sugar and add the egg. Once you obtain a homogeneous mixture, add the milk and rum. Pour the liquid ingredients to the flour mixture.
  • Gradually, knead soft dough, if necessary add a little milk or flour. From the ready dough thin elongated roll with a diameter of about 3 cm, wrap it in foil and leave in the fridge for 40 minutes.
  • Then, from the roll, cut out 1 cm thick cookies with a sharp knife. Arrange them in a pan with baking paper and put them in to bake for 15 minutes.
  • Halfway through the baking, you may turn them over.

Crust
1 1/2 cups all-purpose flour
3/4 cup sugar
3/4 cup cold Land O Lakes® Butter cut into chunks
Topping
2 cups sweetened flaked coconut
1 cup sweetened dried cranberries
3/4 cup firmly packed brown sugar
1/3 cup all-purpose flour
3 large Land O Lakes® Eggs
1 1/2 teaspoons vanilla
1/4 teaspoon salt

Steps:

  • Heat oven to 350°F.
  • Combine 1 1/2 cups flour and sugar in bowl; cut in butter with pastry blender or fork until mixture resembles coarse crumbs. Press onto bottom of ungreased 13x9-inch baking pan. Bake 15 minutes or until edges are lightly browned.
  • Combine all topping ingredients in bowl; mix well. Spread over hot, partially baked crust. Continue baking 20-25 minutes or until golden brown. Cool completely. Cut into bars.
