Cold Peanut Black Fungus recipe - Simple Chinese Food image

50g Black Fungus
Right amount salt
Right amount Vinegar
Right amount garlic
Right amount star anise
Right amount pepper
Right amount Cinnamon
Right amount Dried chili
Right amount Millet pepper
Right amount Soy sauce
Right amount Blending oil
Right amount parsley
Right amount sesame oil
Right amount Bay leaf
Right amount Fennel

Steps:

  • Soak the black fungus and blanch it in some salt water;
  • Take out the blanched black fungus;
  • Pour the washed peanuts directly, and add some salt;
  • Put star anise, pepper, cinnamon, bay leaf, dried chili and cumin into the seasoning ball;
  • Put the seasoning balls in the pot and cook with peanuts for five minutes;
  • Turn off the heat, close the lid, and soak together for more than three hours;
  • Drain the soaked water and take out the seasoning ball;
  • Put the prepared black fungus, ground peanuts and coriander into a large bowl;
  • In a small bowl, mix well with vinegar, pepper, minced garlic, sesame oil and millet and minced pepper;
  • Pour the adjusted seasoning juice into the prepared dish;
  • Stir evenly;
  • Load it into the disk.

½ a free-range chicken (washed and cut into bite-sized pieces)
1 tbsp dried lily buds (soaked until soft)
10gm dried black fungus (washed and soaked until soft)
2 shiitake mushrooms (soaked until soft)
shredded ginger (to taste)
1 stalk spring onion (finely chopped, to garnish)
1 tbsp light soy sauce
½ tsp dark soy sauce
1 tbsp oyster sauce
1 tsp Shaoxing wine
1 tsp corn starch
1 tsp sugar
¼ tsp salt
Few dashes of grounded white pepper
1 tsp sesame oil

Steps:

  • To Prep Make sure your chicken is dry then mix with the seasoning ingredients in a mixing bowl. Cover and allow the chicken to marinate for 20 minutes. To Cook Blanch the soaked lily buds and black fungus in boiling water for a couple of minutes. Cut the soaked mushrooms and blanched black fungus into strips. Add the lily buds, black fungus, mushrooms, and ginger to the marinated chicken and mix well. Steam the chicken in a steamer until the chicken is cooked through (about 20 minutes). Make sure the water is boiling in the steamer before placing the chicken in. Garnish with the chopped spring onions and serve hot with some white rice.
