This is my most requested recipe. We have it at every family function, and it always goes fast. I often double the recipe, making one really large cheese ball. I got this from my mother, who got it from an old cookbook. It really is simple and delicious. You will never want to make another cheese ball. Enjoy!

Number Of Ingredients 7

1 (8 ounce) package cream cheese, softened
1 (2 ounce) package dried beef (also called chipped beef- I use Carl Budding)
1/4 cup green onion
1/2 teaspoon garlic salt
2 teaspoons Worcestershire sauce
2 teaspoons lemon juice
2 tablespoons mayonnaise

Steps:

  • Dice the dried beef into small pieces. This is dependent upon how small you want your dried beef to be. I usually dice mine into 1/4" squares (approx.), but others like it more finely diced.
  • Dice/mince the green onions.
  • Add all of the ingredients to the softened cream cheese in a medium sized bowl. Stir. (I usually use my clean hands for this; a wooden spoon also works with a bit more effort). The ingredients should be consistent throughout the cheese ball.
  • Wrap in plastic wrap. Store in the fridge for at least 6-8 hours. This is one of those recipes that is at its best after sitting overnight. This way, the flavors really blend.
  • Serve with crackers. My family likes Wheat Thins, but it really goes with any type of cracker. Enjoy!

1/4 lb dried beef
2 tablespoons butter
3 tablespoons flour
3 cups milk
black pepper, to taste

Steps:

  • Melt butter in skillet.
  • Tear the dried beef into small pieces & stir into the butter.
  • Brown meat lightly.
  • Stir in flour.
  • When flour is dissolved into butter, add milk, stirring constantly.
  • Cook over low heat until the mixture thickens.

  • In a medium bowl, combine cream cheese, cheddar, bell pepper, 1/4 cup dried beef, 1 green onion, Worcestershire, garlic powder, and cayenne. Season with salt and pepper.  Form into a ball and wrap in plastic wrap. Refrigerate until firm, at least 2 hours.  On a plate, combine remaining ¾ cup dried beef and remaining green onion. Unwrap cheese ball and roll into dried beef mixture to coat the outside. Refrigerate until ready to serve. Serve with crackers.

  • Preheat the oven to 160ºC/325ºF/gas 3. Cover the porcini with boiling kettle water and leave to rehydrate. Season the beef cheeks with sea salt and black pepper, then brown them in a large casserole pan on a high heat with a splash of oil, turning until well coloured all over. Meanwhile, slice the pancetta into lardons. Peel the celery, onions and carrots, then chop into rough 1cm dice. In a pestle and mortar, crush the cloves with 1 teaspoon each of salt and pepper, then peel and pound in the fresh garlic. When brown, push the cheeks to one side of the pan and reduce to a medium heat. Add the pancetta and cinnamon, stirring until the pancetta is lightly golden.
