CHICKEN DRAGON EGGS – BBQ PIT BOYS



Chicken Dragon Eggs – BBQ Pit Boys image

No Eggs required for these bacon wrapped jalapeno popper stuffed chicken breasts. Watch the BBQ Pit Boys Pitmaster of the Joseph-Que Chapter put these together using these simple tips.

Skinless boneless chicken breast
Pork belly bacon
Cream cheese
Shredded cheddar cheese
Seasoning
Green jalapenos peppers

Steps:

  • Cut the jalapenos in half and remove the seeds and inner stem.
  • Butterfly the chicken breast. Now place a plastic wrap over the spread chicken and flatten it out with a mallet.
  • Fill both the hollowed out jalapeno with cream cheese, add a good layer of shredded cheese on top and join the halves together. You now have a perfect dragon egg.
  • Place the dragon egg in middle of the flattened chicken and wrap the meat.
  • Now take a strip of pork belly bacon and start wrapping it tight around the chicken dragon egg. Keep doing it till the entire bacon strips are wrapped. Trim up the edges if you want to.
  • Now take your favorite seasoning and rub it all over the bacon wrapped chicken.
  • Place the bacon wrapped chicken over indirect heat. You want the internal temperature of about 165F.
  • You may baste some sauce in middle of the grilling and do it several times in the grilling process.
  • Pull it off the grill and let it set for a few minutes.

1 pound(s) ground sausage
- fine dry bread crumbs
- shredded chedder cheese
8 - hard boiled eggs
1 - egg, beaten

Steps:

  • Preheat oven to 375 degrees.
  • Dived sausage into 8, 2-ounce portions.
  • On a surface that has been sprinkled with bread crumbs, pat out each 2 ounce sausage portion to a 1/8-inch thickness.
  • Sprinkle each sausage patty with two tablespoons of shredded cheese.
  • Carefully wrap one patty completely around one of the hard boiled eggs. Press the edges together to tightly seal the egg in it's sausage cocoon. Repeat with remaining sausage patties and hard boiled eggs.
  • Dip each of the sausage wrapped eggs into the beaten egg and then roll it in a bowl of the bread crumbs.
  • Place the finished dragon egg on a baking sheet. Bake in the preheated oven 20 minutes or until the sausage is lightly browned
  • Remove from oven and enjoy!
