Number Of Ingredients 2

1/2 cup quinoa
rinsed 1 cup water 1 pinch nutmeg 1 tsp grated ginger 1/3 cup chopped prunes 1/4 cup rice milk

Steps:

  • In a small pot, stir 1/2 cup quinoa, a pinch of nutmeg and 1 tsp of grated ginger into a cup of water. Bring to a boil. Reduce the heat, cover the pot and simmer for 10 minutes. Stir in the prunes and rice milk. Cover again and cook another 5 minutes. Before serving, stir in 1 tbsp of flaxseed oil.

  • 1. Rinse quinoa in cold water if saponin has been removed, if not rinse in hot water. Add rinsed quinoa to boiling water and, reduce heat to low and simmer for 7 minutes.  2. Add dried cherries, cranberries and simmer until liquid is absorbed about an additional 5 to 7 minutes.  3. While quinoa is cooking, combine remaining ingredients in food processor and puree until smooth.  4. Remove quinoa from heat and combine pureed mixture with quinoa and mix well.  5. Place in serving bowls and refrigerate until ready to serve.

  • Preheat oven to 350° F. Thoroughly cover a baking sheet with parchment paper or cooking spray. In a large bowl add ground turkey, quinoa, red onion, garlic, parsley, basil, oregano, egg, salt and pepper. Mix well to combine.Roll into 1 to 1-1/2 inch balls and add to prepared baking sheet, spacing evenly.Bake for around 30 minutes until the meatballs are firm and cooked throughout.While the meatball are baking heat the tomato sauce in a large saucepan.Transfer the meatballs to the tomato sauce and stir to coat them.Sprinkle some parsley on top.Serve the meatballs alongside the lettuce leaves.
