THEY ARE A CAKE LIKE, SOFT COOKIE, AND LIKE A APPLE SPICE COOKIE.. (NOW I DONT TELL PEOPLE THEY ARE MINCEMEAT UNTIL AFTER THEY TASTE THEM BECAUSE THEY WON'T TASTE THEM IF YOU TELL THEM... 1 cup(s) shortening
1 1/2 cup(s) sugar
3 - eggs
3 cup(s) unsifted flour
1 teaspoon(s) baking soda
1/2 teaspoon(s) salt
1 1/3 cup(s) none such (borden) ready to use mincemeat or (1/2 of 27-oz jar)

Steps:

  • PRE HEAT OVEN TO 375F.
  • IN LARGE MIXER BOWL, BEAT SHORTENING AND SUGAR UNTIL FLUFFY. ADD EGGS, BEAT WELL. STIR TOGETHER DRY INGREDIENTS: GRADUALLY ADD TO SHORTENING MIXTURE. MIX WELL. STIR IN MINCEMEAT. DROP BY ROUNDED TEASPOONFULS, 2 INCHES APART, ONTO GREASED BAKING SHEETS. BAKE 8 TO 10 MINUTES OR UNTIL LIGHTLY BROWNED.
  • *** NOTE DO NOT OVER COOK THEY WILL GET TO DRY.. THEY ARE TO BE MOIST.. THIS IS A CAKE LIKE COOKIE.

Here's an easy cookie recipe that makes a nice small batch - just 12 cookies so you don't have too many sitting around your house for days. Increase the sugar to half a cup if you are using plain/regular instant oats.

Cook Time 15 minutes

Number Of Ingredients 5

1/4 cup sugar
1/2 cup all-purpose flour
1/2 cup margarine
1/2 teaspoon baking soda
3 (48 g) envelopes instant maple and brown sugar oatmeal (but any flavor should work) or 3 (48 g) envelopes instant apple and cinnamon oatmeal (but any flavor should work)

Steps:

  • Preheat oven to 350 degrees.
  • Lightly spray a baking sheet with non-stick spray.
  • In a medium bowl, mix all of the ingredients together.
  • Using your hands, roll dough into 12 balls, flatten each one slightly and place them on a baking sheet.
  • Bake for about 15 minutes.
  • Remove from oven and let sit for 5 minutes before placing cookies on a wire rack to cool.
