Make yourself a chicken avocado taco salad just like Pollo Loco's! This must-try chicken taco salad is perfectly seasoned and made easy just for you!

7 oz canned, rinsed and drained black beans
3/4 cup medium-hot salsa
1/2 cup chopped fresh cilantro
1 tbsp or lemon juice lime juice
2 tbsp chili powder
1 tsp ground cumin
1 tsp ground coriander
1 tsp brown sugar
¼ tsp cayenne pepper
3 tbsp olive oil
1 lb skinless, boneless chicken breast halves
4 taco shells
2 cups shredded lettuce
½ cup chopped fresh cilantro
1 peeled, pitted, and sliced avocado
1 cut into wedges lime
½ cup sour cream

Steps:

  • Preheat an outdoor grill and lightly oil the grate. You may also use a properly greased indoor electric grill for this.
  • Mix black beans, salsa, ½ cup cilantro, and lime juice in a bowl. Set aside. 
  • Make a paste by combining chili powder, cumin, coriander, brown sugar, cayenne pepper, and olive oil in a bowl until smooth.
  • Marinate the chicken breast with the spice paste up tp 4 hours before grilling.
  • Grill the chicken until no longer pink in the center and the juices run clear, about 7 minutes each side.
  • Transfer chicken to a cutting board and chop. Divide chicken over taco salad shells and top with bean mixture, lettuce, and remaining ½ cup cilantro.
  • Serve with avocado, lime wedges, and sour cream.

4 cups green leafy lettuce, or to taste
1?½ cups thinly sliced cooked chicken breast
1 cup sliced black olives
½ cup thinly sliced green bell pepper
½ cup thinly sliced red bell pepper
¼ cup diced red onion
? cup vegetable oil
¼ cup red wine vinegar
¼ cup fresh lemon juice
1 tablespoon white sugar
1 teaspoon salt
½ teaspoon ground black pepper
? teaspoon chopped garlic, or more to taste
1 avocado - peeled, pitted, and thinly sliced

Steps:

  • Combine lettuce, chicken, black olives, green bell pepper, red bell pepper, and red onion together in a bowl; cover with plastic wrap and refrigerate until chilled, about 30 minutes.
  • Mix oil, red wine vinegar, lemon juice, sugar, salt, pepper, and garlic in a container with lid; cover and shake until well combined. Refrigerate until chilled, about 30 minutes.
  • Mix avocado into salad. Shake dressing and drizzle over salad; toss lightly.
