How to Cook Stir Fry Vegetables in a Wok - Easy image

1 red pepper
1 yellow pepper
2 carrots
1 eggplant
1 courgette
1/2 onion
Soy, oyster or sweet and sour sauce
Oil
Brown rice to accompany (optional)

Steps:

  • The first step to cook stir fry vegetables in a wok is to wash all vegetables except the onions and cut into thin strips. Remember not to dice the vegetables, to follow the traditional recipe make thin and long strips.
  • Then pour a little olive oil in the wok and, when hot, add the carrots and onions first; sauté for a few minutes until you see the onion turn golden brown.
  • When the onion is golden, add to wok the remaining vegetables selected. Sauté all ingredients over medium heat and keep stirring them for even cooking and so they don't stick to the wok. Note that you should not cook them for too long, just enough so that they're slightly cooked but without becoming soft.
  • When the vegetables are cooked to your liking, it is time to add the sauce you like to dress your vegetables: either soy sauce, oyster sauce or sweet and sour sauce. Mix it all for a while so the sauce soaks in well and then remove from heat.
  • If you've decided to accompany the dish with the rice, you can add all the ingredients to the previously cooked rice and that's it!Now you know how to cook vegetables in a wok, a healthy and low calorie dish that is perfect to eat at any time of day. If you are going to eat it in the morning, the tradition is to accompany the wok with a handful of boiled rice or grilled chicken. Enjoy!
