Original Sausage Balls - South Your Mouth image

The original recipe for sausage balls using Bisquick, cheddar cheese and sausage perfect served as an appetizer, tailgate food, party favorites or even breakfast!

Total Time 30 minutes

Prep Time 10 minutes

Cook Time 20 minutes

Number Of Ingredients 4

3 scant cups Bisquick baking mix
1 pound pork sausage at room temperature (I use ‘hot’)
16 ounces sharp cheddar cheese, shredded (4 cups)
1/4 cup chopped fresh chives or parsley (optional)

Steps:

  • Combine all ingredients in a stand mixer then mix at low speed using the paddle attachment (or mix by hand) until all ingredients are evenly combined.
  • Roll dough into 1 1/2 inch balls and place on a baking sheet one inch apart. I used my handy-dandy cookie scoop to make quick work out of portioning these.
  • Bake at 350 degrees for 20-25 minutes or until lightly browned on the bottom.

1 pound sausage
4 cups shredded Cheddar cheese
3 cups baking mix

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a medium bowl, combine the sausage, cheese, and dry baking mix. Mix together, and shape mixture into walnut-sized balls. Place on a foil-lined cookie sheet.
  • Bake for 12 to 15 minutes. Serve hot.

  • In a heavy bottomed casserole dish over a medium heat, heat the oil. Add the sausages and cook for around seven to eight minutes, turning occasionally until browned all over. Transfer sausages to a plate and return pan to the heat.  Add the smoked pancetta lardons, and cook for two to three minutes, or until they begin to crisp up. Add the onions and cook for a further five minutes, until they begin to soften, then finally add the garlic and cook for another two minutes.  Pour the red wine into the pan and allow it to bubble for a couple of minutes, scraping any goodness from the bottom of the pan.  Add the chopped tomatoes, smoked paprika, tomato puree, chicken stock, Henderson’s relish, bay leaves, fennel seeds, honey and rosemary. Stir to combine. Add the sausages back into the pan and bring to a simmer. Loosely cover the pan and leave to simmer for 20 minutes. Stir in the cannellini beans and continue to cook for another 10 minutes until the sauce has thickened. Remove from heat and season to taste with salt and pepper.  Finally stir in the balsamic vinegar. Serve with warm crusty bread for mopping up all the tasty sauce.
