Mother made this soup when I was a child, and it was always one of my favorites. After 75 years, it still is! Mother's cellar was filled with home-canned vegetables, so the basic ingredient of this soup was right at hand. Yield 6 servings (1-1/2 quarts).

Number Of Ingredients 8

1 can (14-1/2 ounces) diced tomatoes, undrained
1/2 teaspoon baking soda
1/4 to 1/2 teaspoon garlic salt
1/8 teaspoon pepper
Salt to taste
1 quart milk
2 tablespoons butter
Minced fresh parsley, optional

Steps:

  • In a large saucepan, bring tomatoes to a boil. Add baking soda, garlic salt, pepper and salt if desired. Reduce heat; add the milk and butter. Heat through but do not boil. Garnish with parsley if desired.

Cream of tomato soup should be gentle and soothing. This is a perfect tomato soup recipe. Adding baking soda to the tomatoes keeps the milk from curdling.

Yield 7 cups

Number Of Ingredients 9

5 tablespoons butter
1/2 cup chopped onion
4 tablespoons flour
4 cups milk
1/2 bay leaf
1 1/2 teaspoons sugar
1 1/2 teaspoons salt
1/2 teaspoon baking soda
3 cups tomatoes, chopped (fresh or canned)

Steps:

  • Melt the butter in a soup pot. Add the onion and cook over medium heat, stirring, until the onion is softened but not browned. Sprinkle the flour over the butter mixture and continue to stir and cook for 1 to 2 minutes. Slowly add the milk, bay leaf, sugar, and salt and continue to cook and stir until slightly thickened. Stir the baking soda into the tomatoes. Add the tomatoes to the milk, and bring just to a simmer. Remove from the heat and put through a strainer. Taste and correct seasonings. Reheat before serving.
