Holiday Mincemeat Cake Recipe - Food.com - Recipes, Food ... image

I made this cake one year for Christmas when I was short of time and wasn't able to make a pie. It was a big hit. It is a very moist cake best served with just a dusting of icing sugar for garnish.

Total Time 1 hours 15 minutes

Prep Time 15 minutes

Cook Time 1 hours

Yield 1 cake

Number Of Ingredients 13

3 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoon salt
3/4 cup butter or 3/4 cup margarine, softened
4 teaspoons grated orange rind
1 1/2 teaspoons vanilla
1 cup granulated sugar
3 eggs
1 (750 ml) jar mincemeat
3/4 cup milk
1 cup chopped nuts
icing sugar, for dusting

Steps:

  • Stir the flour, baking powder, baking soda and salt together; set aside.
  • Cream the butter, orange rind and vanilla in a large bowl with an electric mixer until light.
  • Beat in the sugar.
  • Add the eggs, one at a time, beating well after each addition.
  • Blend in the mincemeat.
  • Add the dry ingredients to the creamed mixture alternately with the milk, beginning and ending with the dry ingredients.
  • Stir in the nuts.
  • Turn the batter into either a greased 12-cup Bundt or tube pan or a greased 9" x 13" cake pan.
  • Preheat the oven to 350 degrees F.
  • If using a Bundt pan, bake for 55 to 60 minutes or until done.
  • If using a cake pan, bake for 45 to 50 minutes.
  • In either case, cool in the pan for 10 minutes.
  • Remove from the pan and cool completely.
  • Dust with icing sugar before serving.

BUTTERMILK BISCUITS RECIPE - MARTHA STEWART

Buttermilk Biscuits Recipe - Martha Stewart image

This mouthwatering buttermilk biscuit recipe comes from "Martha Stewart's Baking Handbook."

Provided by Martha Stewart

Categories     Bread Recipes

Yield Makes 1 dozen

Number Of Ingredients 7

4 cups all-purpose flour, plus more for dusting
1 tablespoon plus 1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon sugar
2 sticks (1 cup) unsalted butter, cold, cut into small pieces
1 3/4 cups buttermilk, plus more for brushing

Steps:

  • Preheat oven to 375 degrees. In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar. Using a pastry blender, cut in the butter until the mixture resembles coarse crumbs with a few large clumps remaining.
  • Pour in the buttermilk; using a rubber spatula, fold buttermilk into the dough, working in all directions and incorporating crumbs at the bottom of the bowl, until the dough just comes together. The dough will be slightly sticky; do not overmix.
  • Turn out the dough onto a lightly floured work surface. With floured fingers, gently pat the dough into a round about 1 inch thick, pressing in any loose bits. Do not overwork the dough. Use a floured 2 1/4-inch round biscuit cutter to cut out the biscuits as close together as possible. (Use one cut edge as the edge for the next biscuit.)
  • Place the biscuits about 1 1/2 inches apart on an unlined baking sheet. Generously brush the tops of biscuits with buttermilk. Bake, rotating sheet halfway through, until the biscuits are golden and flecked with brown spots, 18 to 20 minutes. Transfer biscuits to a wire rack to cool.

  • For the cookies: In the bowl of a stand mixer fitted with a paddle attachment, beat the sugar, butter, vanilla extract and almond extract on medium until smooth and fluffy, about 2 minutes. Add the eggs and beat until combined. (The batter will look separated.) With the mixer on low, gradually add the flour, baking powder and salt. Beat until all of the dry ingredients are incorporated. Wrap the dough tightly in plastic wrap and chill for at least 1 hour or up to 4 hours. Preheat the oven to 350°F. Shape the dough into about 36, 1-inch balls (lightly dusting hands with flour, as needed) and place on 2 parchment-lined baking sheets, spacing each at least 1-inch apart. Or, if desired, roll each dough ball between your hands (lightly dusting in flour if needed) into a 4-inch long log and coil each piece into a mound. Bake the cookies until set and very lightly browned on the bottom, 10 to 12 minutes. Transfer the cookies to a wire rack to cool completely, about 30 minutes. For the glaze: In a medium bowl, whisk together the powdered sugar, milk and vanilla extract. Dip the top of each cookie in the glaze, allowing the excess to drip off and then sprinkle with the Jimmy sprinkles. Let the cookies stand until the glaze hardens, about 30 minutes.

  • In a mixing bowl, combine the flour, sugar, baking powder, cinnamon, and salt. In a separate bowl, beat the eggs with a fork, then add milk, melted butter, and vanilla. Gently fold dry and wet ingredients together until just combined (do not over mix.) Fold in the apples. Add enough apples to make a very chunky batter. You want the apples to shine though! Heat a couple of inches of canola oil in a dutch oven over medium heat. When it gets hot (about 350 degrees), drop a little drop of batter into the oil. If it sizzles immediately and rises to the top, the oil is ready; if it burns quickly, turn down the heat. Drop 1 tablespoon of batter into the hot oil, six or eight at a time. Sometimes they'll flip over by themselves; sometimes you have to flip them. Just watch them and make sure they don't get too brown, but cook them long enough to make sure the batter's cooked through, about 2 to 2 1/2 minutes total. Repeat with the remaining batter. Remove fritters and drain on a paper towel.  For the glaze (if using): In a medium bowl, whisk together the powdered sugar, salt, vanilla extract and whole milk. Dust the fritters very generously with powdered sugar, or dip fritters in the light doughnut glaze. Serve warm!

PECAN PIE BROWNIES RECIPE | SOUTHERN LIVING
If you're into cakey brownies, these are not the treats for you. In fact, everything about these brownies is gooey, moist, and rich—a truly decadent affair for chocolate lovers and pecan pie lovers alike. Made by baking a sheet of thick chocolatey brownies and then adding a layer of pecan pie filling spiked with a touch of bourbon, these brownies pack a lot of flavor into each bite. The two layers intermingle into squares of dense chocolate, crunchy pecan, and syrupy pecan pie filling. The brownie batter itself is made by melting chocolate chips in warm butter before whisking in sugar, eggs, vanilla, and salt. Equal parts of cocoa and flour are then added to this liquid mixture to make a brownie batter that's amazingly rich in chocolate flavor. Most brownies are not made from a base of melted chocolate, but this secret is what keeps the brownies moist, dense, and chocolatey. While the brownies are in the oven, whisk together brown sugar, eggs, vanilla, melted butter, and bourbon to simulate the flavor of a pecan pie. Instead of an actual pecan pie filling that requires a long time to set in the oven, this filling is an amalgamation of ingredients modified to bake into a sliceable layer in just 25 minutes. Stir pecans into the liquid filling, and pour it over the brownie base. Then, bake it until the two distinct layers have melded into one sheet of decadent pecan pie brownies.

  • Once the brownies are baked through, pour the pecan mixture overtop the brownies and spread evenly with a spoon. Return to the oven until the Pecan Pie Topping is set, about 25 minutes. Allow to cool completely before slicing.
