Crispy, crunchy air fryer empanadas are so easy to make at home without the mess or uncertain timing of deep-frying. Plus, they come out of the air fryer perfectly crisp and golden brown every time.

Ingredients

10 empanada discos (thawed)
1 1/4 cup chili (or another filling of your choice, like shredded chicken)
1 large egg
1 tablespoon water

Steps:

Place an empanada disco on a cutting board in front of you. Spoon 2 tablespoons of filling onto the disk, slightly off-center (see photos above). Fold the dough into a half-circle, encasing the filling side. Pinch the edges of the dough together to seal them, then crimp with a fork. Repeat with remaining dough/filling to form 10 empanadas.
In a small bowl, whisk together the egg and water. Brush onto the empanadas.
Place the empanadas into your air fryer in a single layer cooking them in batches if necessary. Fry at 330°F for 8-10 minutes, or until crisp and golden brown.

These easy beef empanadas made with my homemade beef picadillo are so easy and delicious made in the air fryer!

Ingredients

8 Goya empanada discs (in frozen section, thawed)
1 cup picadillo
1 egg white (whisked)
1 teaspoon water

Steps:

Spray the air fryer basket generously with olive oil spray to avoid sticking, or line the basket with air fryer parchment paper.
Place 2 tablespoons of the picadillo in the center of each disc. Fold in half and use a fork to seal the edges. Repeat with the remaining dough.
Whisk the egg whites with water, then brush the tops of the empanadas.
Air fry in a single layer, in batches as needed 350F 8 minutes, turning halfway or until golden. Remove from heat and repeat with the remaining empanadas.
