The origin of the name of this chain of Japanese steakhouses dates back to 1935. that's when founder Rocky Aokis father, Yunosuke Aoki, opened a small coffee shop in Japan and named it "Benihana" after a wild red flower that grew near the front door of his shop. Next time you're at Benihana, look carefully and you'll notice that bright red flower has been incorporated into the restaurants logo. With most of the cooking performed before your eyes on an open hibachi grill, Benihana maintains a much smaller kitchen than most restaurants, allowing practically the entire restaurant to become productive, money-generating dining space. The limited space behind the scenes is for storage, office and dressing rooms, and a small preparation area for non-cooked items like these sauces. These sauces will go well with a variety of Asian dishes and can be frozen in sealed containers for weeks at a time. CRUNCHY ALMOND AND OAT CHICKEN FINGERS WITH YOGURT-DIJON ...
These will be a favorite with both the kids and adults alike! The sweet and crunchy chicken fingers are balanced by a slightly spicy dipping sauce. This recipe makes a large yield so plan to prepare these for a casual get together with family friends and neighbors. Have leftovers? Make a “Fried” Chicken Salad by tossing cut up chicken fingers, mixed greens, grape tomatoes, sliced cucumbers and red onions with reduced-fat ranch dressing. Or make lettuce wraps and coarsely chop the chicken fingers and spoon them into either romaine or Bibb lettuce leaves and top the chicken with a quick slaw made of shredded cabbage and an Asian vinaigrette.

Steps:
- Preheat oven to 400 F. Coat baking sheet with cooking spray.
- Sprinkle chicken with 1/4 each salt and pepper. Spread crushed cereal on a plate. Put egg whites in a shallow bowl.
- Dip chicken in egg whites, then coat in crumbs and arrange on prepared baking sheet. Coat with cooking spray.
- Bake 15 to 20 minutes or until crumbs are golden and crisp and chicken is cooked through.
- Meanwhile, stir together yogurt, mustard, mayonnaise and remaining salt in small bowl. Serve with chicken fingers.
- Serving size: 1 chicken tender and 3 1/2 teaspoons sauce.

- Preheat oven to 425°. In a large bowl, combine the first 9 ingredients. Place 2 teaspoons of filling in center of a wonton wrapper. (Cover rest of wrappers with a damp paper towel until ready to use.), Moisten wrapper edges with water. Fold edge over filling and roll to form a log; twist ends to seal. Repeat with remaining wrappers and filling., Place pot stickers on a baking sheet coated with cooking spray; spritz each with cooking spray. Bake 12-15 minutes or until edges are golden brown., Meanwhile, place jelly in a small microwave-safe bowl; microwave, covered, on high until melted. Stir in vinegar and soy sauce. Serve sauce with pot stickers.
