1 (8-ounce) package dried elbow macaroni or favorite pasta (about 2 1/4 cups, uncooked)
¼ cup (4 tablespoons) butter
¼ cup all-purpose flour
2 cups milk
1 tablespoon whole-grain Dijon mustard
¼ to 1/2 teaspoon salt
½ teaspoon freshly ground pepper
¼ teaspoon hot sauce
1 (8-ounce) package shredded sharp Cheddar cheese (about 2 cups)
2 tablespoons grated Parmigiano-Reggiano (optional)
Toppings (optional):
½ cup fresh breadcrumbs
2 tablespoons butter, melted

Steps:

  • Preheat oven to 350°.
  • Cook macaroni according to package directions. Drain and set aside. Melt butter in a large heavy saucepan over low heat; add flour, stirring until smooth. Cook 3 to 5 minutes, stirring constantly. Turn heat to medium; gradually whisk in milk, and cook over medium heat, stirring or whisking constantly until thickened, about 10 minutes. Stir in pasta, mustard, and next 4 ingredients, stirring just until cheese begins to melt.
  • Pour pasta mixture into a lightly greased 13- x 9-inch baking dish. Sprinkle with Parmigiano-Reggiano or more Cheddar. If desired, top with fresh breadcrumbs, and drizzle evenly with melted butter.
  • Bake, uncovered, at 350° for 25 minutes or until bubbly and golden. Let stand 5 minutes before serving.

2 cups macaroni, or pasta of choice uncooked
3 tablespoons butter
8 ounces processed American cheese, cubed
8 ounces light cream cheese, cubed
1 teaspoon Dijon mustard
1 cup milk
½ cup whipping cream
1 (12 ounce) can evaporated milk
2 (10 ounce) cans Red Gold® Petite Diced Tomatoes & Green Chilies, drained

Steps:

  • Place the uncooked pasta in the bottom of a 5-qt. slow cooker that has been sprayed with cooking spray.
  • Add the remaining ingredients, except tomatoes, to the slow cooker and stir until well combined. Cook on LOW for 4 hours.
  • Just before serving add tomatoes; stir to combine.

    2. Heat the oven to 220 degrees. To make the sauce, melt the butter in a heavy saucepan, sprinkle with the flour, and cook over low heat for 3 minutes, stirring constantly with a wooden spoon. Gradually add half the heated milk, stirring well, until the sauce thickens, then gradually add the remaining milk, stirring, until thick but runny.

    3. Add the cheeses, mustard, paprika, sea salt and pepper and simmer for 3 minutes, adding a little more milk or water if it gets too thick. Add the pasta and toss to coat, then divide between four lightly oiled ovenproof ramekins or pots. Mix the breadcrumbs with two tablespoons of parmesan and scatter over the top.
