Number Of Ingredients 8

2 tablespoon margarine
1/2 cup sliced fresh mushrooms
1/4 cup finely chopped onion
1 cup fresh spinach
1 cup liquid egg substitute
2 tablespoon fat-free milk
1/2 teaspoon garlic powder
1/4 teaspoon black pepper

Steps:

  • In a large skillet over medium heat, melt margarine. Add mushroom and onion and cook 3 minutes or until tender, stirring occasionally. Stir in spinach and heat for 1 minute or until spinach is wilted. Remove veggies from skillet and set aside.
  • In a medium bowl, combine egg substitute, milk, garlic powder, and pepper; mix well. Coat skillet with cooking spray and place over medium heat. Add egg mixture to skillet and stir gently for 1 minute; allow egg to set up for 1 to 2 minutes.
  • Top eggs with veggie mixture. Carefully fold omelet in half and slide onto platter. Cut in half and serve immediately.
