APPLE ENCHILADAS - JUST A PINCH RECIPES
These Apple Enchiladas are a great fall or winter dessert...easier than pie or cake but smells great in the oven. Few ingredients and ready to eat in minutes. This goes well after many meals, or serve it with breakfast.

Steps:
- Start with a 9x13 casserole dish. Spoon about one heaping quarter cup of pie filling evenly down the center of each tortilla. Sprinkle with cinnamon; roll up, tucking in edges; and place seam side down in prepared dish.
- In a medium saucepan over medium heat, combine butter, white sugar, brown sugar and water. Bring to a boil, stirring constantly; reduce heat and simmer 3 minutes. Pour sauce over enchiladas and let stand 45 minutes.
- Bake 350 degrees in preheated oven 20 minutes, or until golden. Serve with vanilla ice cream or as a side dish to ham.
GRANNY SMITH APPLE BUNDT CAKE | JUST A PINCH RECIPES
We swear that the autumn leaves began to fall just as we pulled this delicious cake from the oven. This is a dense and moist Bundt cake with apples in every bite. It seems like there is too much oil, but the amount works perfectly in the recipe. We love the slight citrus flavor with the apples and fall spices. Drizzling the glaze (that has a hint of orange) is just right. You'll find excuses to make this cake year-round but it's the perfect cake for fall.

Steps:
- Prepare Bundt pan (butter and flour or Baker's Joy) and preheat oven to 325 degrees.
- Beat together sugar, eggs, oil, vanilla, and orange juice. Mix until smooth.
- Then slowly add the flour, salt, baking soda, cinnamon, and nutmeg mixing as you go.
- Fold in apples and pecans. The batter will be very thick and dense.
- Spoon batter into prepared pan evenly.
- Bake in preheated oven for 1 hour and 15 minutes or until a tester comes clean. Allow cake to sit in the pan for 10-15 minutes and then turn onto a cake plate. Allow to cool completely.
- Mix glaze to desired consistency.
- Drizzle the cake with the glaze and enjoy!
