Southern Corn Pone Bread Recipe | Allrecipes image

A bona fide Southern tradition! Authentic Southern corn pone is never sweet, and is baked in a cast iron skillet. Just like Grandma used to make!

Yield 1 corn pone cake

Number Of Ingredients 5

¼ cup canola oil
1?½ cups white cornmeal
1?½ teaspoons salt
1?? cups buttermilk
2 eggs

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Place a 9 inch cast iron skillet on the center rack.
  • When the skillet is hot, carefully remove the skillet from the oven. Pour the canola oil into the skillet and gently swirl the pan to coat the bottom and the sides. Return the pan to the oven for ten minutes.
  • While the oil is heating, mix together the cornmeal and salt in a medium bowl. Add the eggs and buttermilk and mix together to make a thin batter.
  • Carefully pull out the rack with the cast iron skillet and pour the batter into the preheated skillet.
  • Bake the corn pone until a toothpick inserted into the center comes out clean, 20 to 25 minutes. If desired, turn the oven to broil for the last few minutes of baking to brown the top.
  • Remove the skillet from the oven and shake the pan to loosen the corn pone from the skillet. Serve the corn pone warm from the skillet or turn out onto a plate.

1 1/2 lb. Ground Turkey
1 tsp. Chili Powder
1 tsp. Ground Cumin
Salt And Pepper, to taste
1 can (14 1/2 Oz. Size) Black Beans, Drained And Rinsed
1 c. Jarred Salsa, Plus More For Serving
1 whole Chipotle Chili In Adobo, Chopped
1 tbsp. Adobo Sauce (from The Can Of Chipotles)
Chopped Tomato, For Serving
Chopped Avocado, For Serving
Thinly Sliced Radishes, For Serving
Crumbled Queso Fresco, For Serving
Fresh Cilantro Leaves, For Serving
Sour Cream, For Serving

Steps:

  • Lightly char the tortillas over an open flame (I used the stovetop burner). Let them cool, then tear them into large chunks.Heat a large nonstick skillet over medium-high heat. Add the ground turkey to the skillet and season with the chili powder, cumin and some salt and pepper. Cook, breaking up the meat with the back of a spoon, until browned, about 5 minutes. Add the beans, salsa, chipotle chile and adobo sauce to the skillet and cook, stirring often, until warmed through and slightly thickened, about 5 minutes more. Add a little water if you'd like it to be saucier. Stir in the tortilla chunks and serve immediately with all the fixings on top.
