This is a deep dish meaty cheesy lasagna. I have been making my lasagna this way for at least 30 years. It has been served at many family occasions in my home. I have also brought it to a lot of homes for gatherings. I have had many compliments on this lasagna and have never shared the recipe until now. I hope you all enjoy this meaty cheesy yummy lasagna. I call it a man's lasagna. Make it for your family and freeze for several meals. Make the sauce for any pasta. It will please any Itlalian food lover. My family and friends love it. I sure hope you do too. Enjoy!

SAUCE
3 - 45 ounce jars ragu chuncky garlic and onion sauce
2 pound(s) sweet italian sausage cooked
2 pound(s) hamburger cooked 85% or 90% llean
1 teaspoon(s) garlic powder
3 teaspoon(s) oregano dried
1 teaspoon(s) italian seasoning dried
1/4 cup(s) chopped fresh basil or substitute dried 2 tsps
1 - bay leaf
1/4 teaspoon(s) rosemary, dried
1/2 teaspoon(s) black pepper
8 ounce(s) package sliced baby bella mushrooms cooked
1 - large green bell pepper chopped and cooked
1/2 - large sweet onion chopped and cooked
2 tablespoon(s) butter divided for frying vegetsbles
2 tablespoon(s) olive oil divided for frying vegetables
3 clove(s) grated or pressed garlic
FILLING
4 cup(s) cottage cheese or ricotta ( i use cottage)
1 cup(s) grated parmesan cheese
1 tablespoon(s) plus 1 tsp basil dried
1/2 teaspoon(s) salt and pepper
2 - eggs beaten
NOODLES AND CHEESE
1 1/3 - boxes lasagna noodles cooked
1 pound(s) grated mozzarella cheese
EQUIPMENT
1 - large foil lasagna pan deep style
- aluminum foil

Steps:

  • Make sauce: it is easier to make a day ahead. Pour the 3 jars of sauce in to a large pot. Add all seasonings and stir to combine. Set on low heat uncovered. Stir occasionally.
  • Heat oven to 425 degree's. On a foil lined baking sheet. Line up sausages. Bake and turn occasionally until cooked through. 30 minutes or more. Remove from oven to cool
  • While sausages are baking. Cook and drain hamburger. Add to sauce.
  • Cook chopped green pepper and onion together in a TBS of olive oil mixed with a TBS of butter. Cook on med high stirring until cooked. Add to sauce.
  • Fry mushrooms in butter olive oil mixture until done. Add to sauce.
  • Add garlic to sauce. Slice cooled sausage into 1/2 inch slices. Add to sauce to combine. Cook sauce uncovered on medium until it boils. Reduce to simmer. Simmer about 2 hours stirring occasionally. Proceed on,with recipe, or cool and refrigerate over night. ( do not refrigerate sauce while hot. Doing that sours the sauce.)
  • Cook Lasagna noodles per instructions on box. I layer cooked moodles between parchment paper on a sheet pan to prevent sticking.
  • Mix cottage cheese with Parmesan cheese, basil salt and pepper. Beat eggs and combine with cheese. Set aside.
  • Heat oven to 375 degree's. Place some sauce in bottom of foil pan to cover bottom. I remove sausage from it after spreading on bottom only. Place noodles length wise in pan on top of sauce. Use enough noodles to cover the width ( occasionslly I have to cut a noodle in half. 3 1/2 noodles.
  • Spread enough cottage cheese mixture to cover noodles. Sprinkle a little mozzarella over it. Top with noodles. Sauce, noodles, cottage cheese cheese etc. continue layering.
  • Last layer should be sauce and lots of Mozzarella on top. Place Lasagna on baking sheet. Spray dull side of aluminum foil with vegetable oil spray. Lay over top of Lasagna. Place in oven and bake until bubbly about 1 1/2 hours. Remove foil from top the last 15 minutes of baking. Remove from oven and let sit about 30 minutes before slicing.

I call this the 10 lb. lasagna because the ingredients total about 10 lbs. I have been practicing my lasagna recipe for years and this is what I have finally come up with. Note: This lasagna can be made the day before and baked the next day. Or you can make this lasagna and freeze to bake at a later time. (If you freeze, please remember to allow extra baking time.)

2 lbs ground Italian sausage (without casings)
1 lb mozzarella cheese
1 lb ricotta cheese
1 (8 ounce) package cream cheese
2 cups grated parmesan cheese
lasagna noodle (boiled according to directions on box use 1-1/2 boxes)
2 (14 ounce) cans diced tomatoes (can use herb seasoned canned diced tomatoes)
1 (14 ounce) can tomato sauce
olive oil
4 -5 garlic cloves (chopped or minced)
1 diced onion (large)
1 minced onion (med-large)
italian seasoning
basil
sugar
wine (white or red)

Steps:

  • Tomato Sauce:.
  • Heat a deep-sided skillet or stock pot and add about 1 teaspoon of olive oil. Add sausage and cook until just browned (3-4 minutes). Remove the meat from the skillet or pot and set aside. Adding at least another teaspoon of olive oil to the skillet or pot, sauté the 1 large diced onion and fresh minced or chopped garlic for a few minutes. Add the canned chopped tomatoes and tomato sauce to the skillet. Add browned Sausage to Tomatoes. Let tomato sauce come to a slight bubbling and turn heat down to simmer. Add at least 1 teaspoon (or more to taste) each of Italian seasoning, basil and sugar to the tomato sauce. Add several dashes of red or white wine for flavoring. Allow tomato sauce to simmer on medium to low heat, stirring occasionally, until tomato sauce is cooked down to about half the amount (about 30-45 minutes).
  • Ricotta Cheese Mixture:.
  • In a separate bowl mix together, ricotta cheese, 8 ounces mozzarella cheese, 1 cup parmesan cheese, 1 pkg. cream cheese, 1 med-large minced onion, 1 teaspoon basil. Set aside until ready to use.
  • Layering:.
  • Using a large deep-sided baking dish or lasagna pan, layer 1/3 tomato sauce, lasagna noodles, ½ ricotta cheese mixture, continue layering until you have ended with tomato sauce.
  • Sprinkle remaining mozzarella cheese and parmesan cheese on the top. Cover with foil and bake at 350 degrees until heated thoroughly and bubbling about 1 hour and 45 minutes. Take foil off and bake for another 15 minutes allowing cheese to lightly brown around the edges.

  • To assemble the lasagna: Coat the bottom of a deep 13 by 9-inch pan with olive oil. Arrange 4 noodles lengthwise in a slightly overlapping layer on the sauce. Then, line each end of the pan with a lasagna noodle. This forms a collar that holds in the corners. Dollop 1/2 of the ricotta mixture over the pasta, spread to the edges with a spatula. Spread 1/2 of the meat mixture over the ricotta. Sprinkle 1/2 of the mozzarella on top of the ricotta. Top with a ladle full of sauce, spread evenly. Repeat with the next layer of noodles, ricotta, sauce, and cheeses. Top last layer with noodles, sauce, shredded mozzarella and Parmesan. Tap the pan to force out air bubbles. Bake for 1 hour. Remove from oven. Let lasagna rest for 30 minutes so the noodles will settle and cut easily. Cut into 2-inch squares and serve.
