THIS FISH IS VERY LIGHT AND DOES NOT HAVE A FISHY FLAVOR.

2 - nice size thin filets (cut into 2x2 pieces)
- canola to deep fry
1 teaspoon(s) salt,pepper and everglade seasoning
1/2 cup(s) milk
1 cup(s) yellow cornmeal

Steps:

  • SOAK FISH IN MILK FOR ABOUT 30 MINS THEN DRAIN.
  • PUT CORNMEAL IN A BOWL WITH A LID AND PUT THE SEASONINGS AND SHAKE.REMOVE LID PUT THE FISH IN ,PUT THE LID ON AND SHAKE.
  • DROP IN HOT OIL COOK ABOUT 5 MINS.TOTAL.
  • SERVE WITH LEMON,TARTER SAUCE AND FRIES.ENJOY!!!!

2 to 4 cups vegetable oil, for frying
2 cups yellow cornmeal 
1 tablespoon seasoned salt 
1/2 teaspoon garlic powder
1/2 teaspoon pepper 
Eight 5- to 7-ounce fillets swai

Steps:

  • Fill a large deep frying pan with 2 to 3 inches vegetable oil and heat over medium-high heat. Preheat the oven to 200 degrees F.
  • Combine the cornmeal, seasoned salt, garlic powder and pepper in a shallow bowl or rimmed plate; set aside.
  • Rinse the fillets off and pat dry. Dredge each fillet in the seasoned cornmeal, making sure all sides are covered, and shake off the excess. Place the dredged fillets in the frying pan, about 3 to 4 at a time, and cook until golden brown, about 3 minutes per side. Transfer to a plate lined with paper towels to absorb excess oil and keep warm in the oven. Repeat with the remaining fillets.

You can fry any fish this way. Our favorites in particular are catfish, swai and speckled trout. I saw this concept on one of the cooking shows but cannot remember which one. This also would work with fried chicken or pork chops.
