These are great to have ready in the freezer for school lunches or snacks. I got this recipe from my church cookbook and have made it several times. I bake mine in the oven instead of deep frying.

Number Of Ingredients 11

2 cups flour
4 teaspoons baking powder
1/2 teaspoon salt
4 tablespoons shortening
1 cup milk
1/2 cup tomato sauce
1/2 cup sliced pepperoni
1/2 cup onion, sauteed
1/2 cup sliced mushrooms, sauteed
1/2 cup mozzarella cheese
1/2 teaspoon oregano

Steps:

  • Sift together flour, baking powder and salt.
  • Cut in the shortening and add milk slowly, stirring constantly to form a soft dough.
  • Turn dough out onto a lightly floured surface and knead lightly.
  • Roll out to 1/4 inch thick and cut into 4 inch circles.
  • Place circles on a plate and cover with a damp cloth.
  • In a medium bowl mix tomato sauce, pepperoni, onions and mushrooms.
  • Mix well.
  • Stir in cheese and oregano until well combined.
  • Place 2 T filling in the center of each circle, fold dough over to make a half circle.
  • Press the edges tog with fingers.
  • Pinch edges with a fork to completely seal.
  • Deep fry in hot oil or bake at 400 degF for 15 minutes on well greased cookie sheet.

We love lobster and absolutely loved this recipe. The tempura batter is flavorful and not overly heavy. Serve at a New Year's Eve party and impress your guests! Be careful not to over fry your lobster - it will become tough.

1 - lobster tail per person
EGG WASH
1 - egg per tail
1/2-1 cup(s) buttermilk
TEMPURA BATTER
1 cup(s) flour
1 tablespoon(s) cornstarch
1 1/2 cup(s) seltzer water
1/2 teaspoon(s) salt
1/2 teaspoon(s) cayenne pepper
1 teaspoon(s) garlic powder
CLARIFIED BUTTER
2 stick(s) butter, unsalted

Steps:

  • Beat eggs and buttermilk well set aside.
  • In a large mixing bowl add all tempura ingredients and mix well. Set aside.
  • Cut the lobster tail down the middle and remove meat. Cut the meat into big bite sized chunks. Dip into egg wash coating well. Then dip into the tempura batter coating well. Deep fry a few pieces at a time for 3-4 minutes. Don't over crowd and make sure grease is hot about 350 degrees. Remove to a plate lined with a paper towel.
  • Clarifying butter. Cut sticks of butter into pieces. Place the butter in a heavy saucepan and melt slowly over low heat. Remove the pan from the heat and let stand for 5 minutes.Skim the foam from the top, and slowly pour into a container, discarding the milky solids in the bottom of the pan.
  • Dip lobster bites into butter and enjoy.
