To ensure a crispy, golden coating and well-cooked meat, keep an eye on the temperature of the oil; it needs to come back up to 350 degrees before adding the second batch of chicken.

1 3 1/2 pound chicken, cut into 10 pieces
2 quarts cold water
2/3 cup coarse salt
1/3 cup granulated sugar
1/3 cup molasses
8 sprigs fresh thyme
2 bay leaves
2/3 cup all-purpose flour
2/3 cup fine ground cornmeal
1/2 teaspoon coarse salt
1 teaspoon crushed red pepper flakes
4 large eggs
3 quarts vegetable oil, for frying

Steps:

  • Combine 1 cup water with remaining brining ingredients in small saucepan over medium heat, stirring just until salt and sugar are dissolved. Remove from heat and cool to room temperature. Combine brine mixture with remaining cold water in a large bowl or deep baking dish. Add chicken to bowl, making sure chicken is covered with the brining liquid. Store in fridge at least 8 hours and up to 24 hours.
  • Remove chicken from brining liquid and pat dry. Combine flour, cornmeal, salt, and red pepper flakes in a shallow dish. Whisk eggs in another shallow dish. Coat chicken in flour mixture, then eggs, and again in flour mixture. Transfer to a rimmed baking sheet lined with a cooling rack.
  • Heat oil to 350 degrees in a large pot. Working in 2 batches, fry chicken for 15 minutes, turning once, until chicken is deep golden brown. Transfer to a paper towel-lined plate to drain. Serve hot or cold.

This recipe, from my old sous chef Mitch SuDock, makes the best fried chicken ever. We used to make brined pork at JUdson Grill, and he started using the brine to make fried chicken for our nightly staff meal. The benefit of brine is that the batter keeps the seasoning from penetrating the meat, but the brine works its way in. Keep a close eye on the thermometer when frying; try to maintain a temperature of 300°F, which will cook the chicken through without burning the exterior.

Number Of Ingredients 14

2 chickens, 3 pounds each, cut into 8 pieces each
Brine (recipe follows)
3 cups buttermilk
2 tablespoons plus 1 1/2 teaspoons kosher salt
3 cups of flour
1 tablespoon plus 1 1/2 teaspoons paprika
1 tablespoon plus 1 1/2 teaspoons cayenne pepper
3 teaspoons freshly ground black pepper
Oil for frying (I cook 4 pieces of chicken at a time in 8 cups of oil in a 5-quart pot.)
1/2 cup of sugar
1/4 cup salt
1 bay leaf
1 teaspoon black peppercorns
1 teaspoon coriander seeds

Steps:

  • 1. Put the chicken in a glass baking dish and pour the brine over the chicken. Cover with plastic wrap and refrigerate for 12-24 hours.
  • 2. Remove the chicken from the brine, remove any peppercorns stuck to the skin, and let the chicken dry slightly on a wire rack while preparing the buttermilk and flour.
  • 3. In a large bowl, stir together the buttermilk with 1 tablespoon of the salt. In another large bowl, stir together the flour with the remaining salt and spices.
  • 4. Dredge the chicken 4 pieces at a time in the flour. Transfer to the buttermilk, gently shaking the bowl to coat the chicken. Transfer the chicken back to the flour, being careful not to scrape off the batter. Gently shake the bowl to coat the chicken with flour, then transfer the pieces to a wire rack, again being careful not to scrape off the batter. Repeat with the remaining pieces of chicken and let dry on the wire rack for 30 minutes.
  • 5. Pour the oil into a 5-quart pot and heat it to a temperature of 350°F. Cook the white and dark meat separately over medium heat. The oil will cool to about 300°F after adding the chicken; this is the correct heat for cooking the chicken. Cook for 5 minutes, then turn the chicken over and cook for an additional 10 minutes for white meat and 12 minutes for dark meat. If the chicken gets too dark, lower the heat. Drain on a wire rack and repeat with remaining chicken. Serve hot or cold.
  • Pour 4 cups cold water into a pot and bring to a boil over high heat. Remove from the heat and add the sugar, salt, bay leaf, peppercorns, and coriander seeds. Allow to cool completely.

For the chicken pieces, make sure that they are not too big: whole drumstick, whole thigh, but the breast part should be chopped into two. Regardless what they use as long as the temp of the oil, peanut is best, is 350 degrees at all times a whole chicken, between 4.75 lbs and 5 lbs takes from 42 to 45 minutes. It takes 9 min per lb for a chicken, Cornish game hen, pheasant, etc. It takes 3 min per lb for a whole turkey and 7 1/2 min per lb for just a turkey breast. The time varies depending on the type of oil you use but that is only a minute or two of the total frying time. Take my word for it. I know for a fact about my deep frying times.

This is the best fried chicken, ever. There I said it. If it's not, then I want to try yours. I started paying attention to fried chicken in a serious way when I began work on the book _Ad Hoc At Home_. Ad Hoc is Thomas Keller's Napa Valley restaurant devoted to family meals. It offers one family meal each night, and everyone eats it. The fried chicken is so popular that it is served twice a week. Chefs Jeff Cerciello and Dave Cruz have tried all kinds of methods, mainly centering on the best crust. They decided that the trio of flour, buttermilk, and flour is best, and I agree. But the key here is the brine. Salt keeps the chicken juicy and seasoned, and also helps pull the rosemary deep into the flesh. So even after the rapture from eating the crust has passed, the flavor of the chicken holds you. This brine, like all brines flavored with aromatics, is best when you bring the ingredients to a simmer in all the water. But if you're like me, sometimes you'll be caught short and need to hurry things along. If you have a scale, you can bring half the water to a simmer with the other brine ingredients, let the aromatics steep for 20 minutes. Measure the remaining water as ice and pour the brine over the ice. Or simply combine the brine with cold water. Because so few people make fried chicken at home, I like to serve it to friends. Happily, it's a great do-head dish; the chicken will keep well for a couple of hours. You can fry it and then keep it on a rack in a 250°F/120°C/gas 1/2 oven until you need it. If you have a convection oven, use that feature to keep the crust crisp. The thighs will become delectably tender given the extra time in the low heat. Serve on a platter garnished with branches of deep-fried rosemary and grated lemon zest.
