Salt and pepper
1 pound long fusilli or mafalda pasta
2 tablespoons extra-virgin olive oil (EVOO)
1 pound ground beef sirloin
1 small carrot, grated or finely chopped
1 small onion, grated or finely chopped
2 cloves garlic, grated or finely chopped
1 cup beef broth
1 28 ounce can crushed tomatoes
A few leaves of basil, torn
1 cup fresh ricotta cheese
? cup finely chopped flat-leaf parsley (a generous handful)
2 tablespoons butter
? cup grated parmigiano-reggiano cheese (a couple of generous handfuls), plus more to pass around the table

Steps:

  • Bring a large pot of water to a boil, salt it, add the pasta and cook until al dente. Drain.
  • While the pasta is working, in a large skillet, heat the EVOO, 2 turns of the pan, over medium heat. Add the beef, crumbling it into bits, and cook until lightly browned, 3 to 4 minutes. Add the carrot, onion and garlic; season with salt and pepper. Cook until the vegetables are softened, 5 minutes. Stir in the beef broth, then the tomatoes and basil; simmer.
  • In a small bowl, stir together the ricotta and parsley.
  • Toss the pasta with the butter, then stir in the parmigiano-reggiano and meat sauce. Scoop the ricotta mixture into each of 4 shallow bowls, then top with the meaty pasta. Pass more parmigiano-reggiano around the table.

1 medium zucchini
1/4 teaspoon salt
1 cup yellow onion (chopped)
1 tablespoon garlic (finely chopped)
1/2 pound ground turkey
16 ounces sliced cremini mushrooms
1 tablespoon unsalted tomato paste
1 28 ounce can unsalted diced fire roasted tomatoes, undrained
1 teaspoon freshly ground black pepper
4 ounces part-skim ricotta cheese (about 1/2 cup)
3 ounces shredded mozzarella cheese (about 3/4 cup)
1/4 cup loosely packed fresh basil
red pepper flakes to taste

Steps:

  • Shave zucchini into long, even strips using a vegetable peeler. Toss with 1/4 tsp salt in a colander and let stand until ready to use.
  • Heat oil in a dutch oven over medium-high heat. Add onion and cook until tender, about 5 minutes. Add the garlic and cook another 3 minutes.
  • Add the ground turkey and break it up into small chunks. Cook, stirring frequently, until browned. Mix in the tomato paste.
  • Add in the tomatoes and pepper and bring to a simmer, stirring often.
  • Reduce heat to medium-low and simmer, stirring occasionally, until slightly reduced, about 6 minutes.
  • Stir in spinach; cover and cook until spinach wilts, about 3 minutes. Gently stir in zucchini strips.
  • Mix together ricotta and mozzarella in a bowl and dot zucchini mixutre with cheese mixture. Cook 2-3 minutes until cheese starts to melt. Sprinkle with basil and serve

(Shapes can be all different sizes.) Cook pasta according to package directions until al dente. Drain, reserving 1 cup pasta water, and return to pot. Meanwhile, in a large skillet over medium heat, heat oil. Add onion and garlic and cook until onion is softened, about 5 minutes. Pour in chicken broth and season with salt, then bring to a boil and simmer for 5 minutes. Add peas and stir until warmed through. Add cooked lasagna noodles, parsley and 1 cup Pecorino to skillet and mix until pasta is well coated. (If pasta is dry, add a splash of reserved pasta water.) Transfer pasta mixture to a large platter. Add large spoonfuls of ricotta all over and top with fresh mint, pepper, remaining 1/2 cup Pecorino, and a drizzle of olive oil. Serve immediately.
