3?½ cups sugar
1 cup milk
¼ cup butter or margarine
1 (16-ounce) package pitted dates
1 cup chopped pecans
1 teaspoon vanilla extract
Powdered sugar

Steps:

  • Combine sugar, milk, and butter in a medium saucepan. Slowly bring to a boil, stirring until sugar dissolves. Stir in dates and pecans. Cover and cook over medium heat 2 to 3 minutes to wash down sugar crystals from sides of pan. Uncover and continue to cook, without stirring, until mixture reaches soft ball stage (240°). Cool to lukewarm (110°). Add vanilla. Beat at medium speed of an electric mixer until mixture is thickened and cool.
  • Sift powdered sugar on a linen towel. Spoon date mixture onto towel. Divide into 2 portions; shape each portion into 2 rolls, 1 1/2 inches in diameter. Wrap rolls in towel; let stand until set. Remove towel, and cut each roll into 1/2-inch-thick slices.

Another recipe that my wonderful mom made every year for the holidays. I remember a long object rolled up in a kitchen towel, hanging from the clothes line, and this year I found out it was the date nut roll, hung out to dry. I guess it's part of the process. So this year mom came for Thanksgiving and I documented the recipe, of course adjusting for those without a closeline.

Number Of Ingredients 6

3 cups sugar
1 cup milk
1 lb dates, roughly chopped
1 cup walnuts, chopped
2 teaspoons vanilla
1/4 cup margarine

Steps:

  • Mix the sugar and vanilla in a medium saucepan on medium heat.
  • Boil gently until mixture reaches 240 degrees.
  • Take off the heat, and add rest of ingredients, stir well.
  • The mixture will thicken as it cools.
  • Pour onto dampened cloth or waxed paper forming a log.
  • Allow to cool or refrigerate.
  • If desired, coat with chopped nuts or powdered sugar and slice.

Do not remember where this came from. It just seems I had been makeing it forever. Friends and family all seem to love this. It is a snap to mix up, refrig. over night and eat next day. Choose own size of roll you want to make. If I am short on time, I roll out about 3 8-10 inche rolls, about 2-2 1/2 inch diameter. Make them longer and thicker, or shorter and thicker. Just make them and eat them.
