We've given trifle an indulgent upgrade with rich dark chocolate custard and hazelnut liqueur – the ultimate Christmas dessert for chocolate lovers

chocolate swiss rolls 2, (about 450g total) cut into 2cm thick slices
Frangelico, Tia Maria or other nut, chocolate or coffee liqueur 100ml, plus 1 tbsp
blanched hazelnuts 50g, toasted and roughly chopped
cocoa powder 2 tbsp
ready-made or thick homemade custard 500ml
dark chocolate 100g, finely chopped, plus more to serve
whipping cream 400ml
icing sugar 2 tbsp
vanilla extract 1 tsp

Steps:

  • To make the chocolate custard, put the custard and chocolate in a pan over a low heat and gently warm through until all the chocolate has melted. Transfer to a bowl, cover the surface with a piece of baking paper, then cool to room temperature. 
  • Cover the base and sides of a glass trifle bowl with the slices of swiss roll, with the spirals facing out. Spoon over the 100ml of alcohol, allowing it to soak into the sponges. Scatter over half the hazelnuts. 
  • Spoon the cooled chocolate custard over the sponges. Chill for 30 minutes-1 hour or until the custard has set. 
  • Whip together the cream ingredients with the 1 tbsp of liqueur until you get soft peaks. Spoon over the custard layer, and make a few peaks and swirls in the cream. Sift over the cocoa powder, add the remaining hazelnuts and grate over more chocolate to serve.

1 (19.8 ounce) package brownie mix
1 (3.9 ounce) package instant chocolate pudding mix
½ cup water
1 (14 ounce) can sweetened condensed milk
1 (8 ounce) container frozen whipped topping, thawed
1 (12 ounce) container frozen whipped topping, thawed
1 (1.5 ounce) bar chocolate candy

Steps:

  • Prepare brownie mix according to package directions and cool completely. Cut into 1 inch squares.
  • In a large bowl, combine pudding mix, water and sweetened condensed milk. Mix until smooth, then fold in 8 ounces whipped topping until no streaks remain.
  • In a trifle bowl or glass serving dish, place half of the brownies, half of the pudding mixture and half of the 12 ounce container of whipped topping. Repeat layers. Shave chocolate onto top layer for garnish. Refrigerate 8 hours before serving.

The original recipe calls for a 19.8-ounce package of fudge brownie mix and 3 (3.9-ounce) packages of chocolate instant pudding mix. Those specific size packages may not be available any longer, but this recipe will still work using today's package sizes. You make one package of brownies according to package directions (drizzle Kahlua or strong coffee over brownies while they are warm), and then prepare the pudding according to directions. Crumble brownies once they are cooled, and then layer brownies, pudding, frozen whipped topping (another great convenience product), and crushed toffee-flavored candy bars.   • To assemble, pour a third of the chocolate cream into a 2.5-litre bowl about 23cm in diameter. Place in freezer until just firm (10-12 minutes), then pour half the crème fraîche jelly on top and return to freezer until just set (15-20 minutes). Halve cake horizontally and trim to fit bowl. Place a cake half on jelly, spoon in a quarter of the crushed blackberries and stand to soak into cake (about 5 minutes).
