Are you a dark chocolate person or a milk chocolate person? I have to say, I’m more in the light/milk chocolate camp myself.

1 c. Butter
5 oz. weight Unsweetened Chocolate
1/4 c. Unsweetened Cocoa Powder
2 c. Sugar
1 tbsp. Vanilla
3 whole Large Eggs
1 1/4 c. Flour
3/4 c. Semi-Sweet Chocolate Chips
Powdered Sugar, For Sifting

Steps:

  • Preheat oven to 350 degrees. In a medium-large saucepan, melt the butter with the unsweetened chocolate over low heat, whisking occasionally until smooth and melted. Sprinkle in cocoa powder and whisk to combine. Remove the pan from heat and allow to cool for about 5 minutes.Stir in sugar and vanilla until just combined.One at a time, stir in the eggs. Gently stir in the flour until halfway incorporated. Add the chocolate chips and stir just until combined. Pour batter (it will be very thick!) into a greased 8 x 8 or 9 x 13 baking pan. (Square pan will result in thicker brownies.) Spread to even out the top and place in the oven. Bake for 40 minutes, then check the brownies with a toothpick. If it is overly gooey/messy, return to the oven for 5 to 10 more minutes. (Just be careful not to burn the edges.) Allow to cool completely (important!), then sprinkle with powdered sugar and cut into small squares. The brownies are very rich! *Note: When warm the brownies will seem overly gooey/soft. As they cool, they will firm up. (Brownies are best several hours after baking, or even the next day!)

1 cup Land O Lakes® Butter cut into chunks
1 1/3 cups dark chocolate chips
2 ounces unsweetened dark chocolate, cut into chunks
1 cup sugar
3 large Land O Lakes® Eggs
1 tablespoon instant espresso powder
1 tablespoon vanilla extract
3/4 cup all-purpose flour
1 tablespoon unsweetened dark chocolate baking cocoa
1/4 teaspoon salt

Steps:

  • Heat oven to 350ºF. Grease and flour bottom of 9-inch square baking pan; set aside.
  • Heat saucepan of water over medium-low heat until hot but not boiling. Combine butter, dark chocolate chips and unsweetened dark chocolate in bowl; place over saucepan of hot water. Cook, stirring occasionally, until chocolate is melted. Remove bowl from saucepan; set aside to cool slightly.
  • Combine sugar, eggs, instant espresso powder and vanilla in bowl; mix well. Stir in cooled chocolate mixture until combined.
  • Add flour, baking cocoa and salt; stir until just combined. (Do not over mix.)
  • Pour into prepared pan. Bake 25-30 minutes or until toothpick inserted into center comes out clean and brownies begin to pull away from sides of pan. Allow to cool completely before cutting.

Spray a 9-by-9-inch square pan with nonstick cooking spray and line with a rectangle of parchment paper, leaving a 2-inch overhang on two opposite sides. Set aside. 2. Place the chocolate, butter and vanilla in a heatproof mixing bowl. Set the bowl on top of a small saucepan with about 2 inches of simmering water, making sure the bottom of the bowl does not touch the water. Stir to melt together, about 3 minutes. Remove from the heat and set aside. 3. In a mixing bowl, combine the cocoa powder, flour and salt. Whisk to fully combine and break up any lumps. Set aside. 4. In another mixing bowl, with a hand mixer or a whisk, beat the eggs and both sugars until light and doubled in volume. Add the sourdough starter and mix to fully combine. Add the chocolate mixture and whisk or beat in until thick and uniform. 5. Add the dry ingredients to the chocolate mixture, then switch to a spatula and fold together until no dry patches remain. Transfer the batter to the prepared pan, spreading it out into an even layer with the spatula. 6. Dot the top of the brownies all over with the jam, then swirl it through the batter by running a toothpick or the tip of a paring knife through the dots in any pattern you desire. Bake the brownies until set, 35 to 40 minutes. Remove from the oven, sprinkle with flaky sea salt and allow them to cool in the pan for at least 1 hour. Use the overhanging parchment paper to lift them out of the pan and slice into squares.
