WE use this old-fashioned traditional Danish dish as our first course on Christmas Eve, but many other times as well. It has a smooth, delicate flavor and is true comfort food.

Number Of Ingredients 6

2 cups milk
6 tablespoons medium grain rice
1/4 teaspoon salt
1 tablespoon sugar
1/4 teaspoon ground cinnamon
1 tablespoon butter

Steps:

  • In a small heavy saucepan, bring the milk, rice and salt to a boil. Reduce heat; simmer, uncovered, for 35-40 minutes or until slightly thickened, stirring frequently. , Spoon pudding into individual dishes. Combine sugar and cinnamon; sprinkle over the tops. Dot with butter. Serve immediately.

This has been in my "Special Cake and Desserts" recipe box for years I like to make for special occasions and holidays. The dates and orange juice flavors make it taste pretty special. To save time use pre sliced packaged dates and orange rind from the spice section in the grocery. If slicing your own dates, it helps to keep dipping your knife in water to prevent from stickiness building up.

Number Of Ingredients 11

1 cup(s) butter
1 cup(s) buttermilk
3 - eggs
2 cup(s) sugar
3 cup(s) flour
- 1 1/2 tsp. soda
1 teaspoon(s) salt
1 cup(s) chopped nuts
2 tablespoon(s) orange juice
2 tablespoon(s) grated orange rind
1 cup(s) chopped dates

Steps:

  • Cream butter and sugar. Add eggs, one at a time, beating well. Add buttermilk until combined
  • Combine flour, soda, salt . Add to sugar mixture.
  • Add nuts, juice, rind and dates.
  • Pour into greased tube pan. Bake in preheated 350 degrees ove about 1 hour.
  • Invert pan on rack to cool a few minutes until it will release from pan.
  • For icing, make a thin sauce of 1 cup sugar, 1 1/4 cups orange juice and 1 Tbsp. grated orange rind. Mix well until sugar is dissolved.. Pour over warm cake and serve with Cool Whip or whipped cream.....or just make a thin confectioner sugar icing to drizzle over cake.
