Our rendition of dan dan noodles is a takeoff on the traditional dish from China's Szechuan province.

8 ounces dried round Chinese egg noodles or spaghetti
2 tablespoons soy sauce
2 tablespoons tahini (sesame seed paste)
1 tablespoon seasoned rice vinegar
1 tablespoon toasted sesame oil
1 teaspoon sriracha sauce
2 cups reduced-sodium chicken broth
1 tablespoon peanut or canola oil
8 ounces uncooked lean ground pork
? cup finely chopped dill pickles
2 cloves garlic, minced
Sliced green onions, fresh cilantro leaves, coarsely chopped peanuts, and/or crushed Szechuan or whole black peppercorns

Steps:

  • Cook noodles according to package directions; drain. Meanwhile, in small saucepan whisk together soy sauce, tahini, vinegar, sesame oil, and sriracha. Stir in broth; heat over low heat.
  • In wok or large skillet heat peanut oil over high heat. Add pork and cook until browned, breaking up meat. Drain off any fat. Add pickles and garlic; cook about 2 minutes more or until pork is crispy.
  • Divide noodles among serving bowls. Spoon broth mixture over noodles and top with pork mixture. Garnish with onions, cilantro, peanuts, and/or crushed peppercorns.

Steps:

  • Make chili oil: Fit a small saucepan with a candy thermometer. Add vegetable oil and Sichuan peppercorns and heat to 325°. Turn off heat and add red pepper flakes, sesame seeds, and five-spice powder. Let oil cool completely. Make pork: In a large skillet over medium-high heat, heat vegetable oil. Add pork, breaking up the meat with a wooden spoon. Cook until meat is deeply golden and crispy, then add hoisin sauce, vinegar, and soy sauce. Cook until all liquid has evaporated. Make sauce: In a large bowl, whisk to combine all ingredients. Cook noodles according to package instructions and add to bowl with the sauce, tossing to coat noodles in the sauce. Divide noodles between serving dishes and top each with pork. Garnish with cilantro, toasted peanuts, and green onions, and drizzle with more chili oil, if desired.
