This recipe will turn your entire family into the Clean Plate Club! Carefully adjust the amount of red pepper flakes and chili pepper paste in order to manage the heat level. A little of each goes a long way, so go very light if you prefer your dishes on the mild side.

MARINADE FOR CHICKEN
3 tablespoon(s) soy sauce
1 tablespoon(s) sesame oil
3 clove(s) garlic,crushed
1/2 teaspoon(s) red chili powder
1/2 teaspoon(s) ground black pepper
1 1/2 pound(s) boneless, skinless chicken thighs
DAKDORITANG INGREDIENTS
1 1/2 pound(s) marinated chicken (see above)
1 pound(s) petite red potatoes, cut in bite size pieces
2 - yellow onions, cut in eighths
1 cup(s) carrots, cut in 1 inch pieces and quartered lengthwise
1/2 cup(s) thinly sliced shitake mushrooms
2 tablespoon(s) minced garlic
1 tablespoon(s) red chili pepper paste
1 tablespoon(s) red chili pepper flakes
2 tablespoon(s) soy sauce
1 teaspoon(s) sugar
2 teaspoon(s) sesame oil
1 tablespoon(s) fresh grated ginger
2 cup(s) chicken broth, low salt
4 - green onions, cut in 1 inch pieces
1/2 - red bell pepper thinly sliced in 1 inch pieces

Steps:

  • Combine the marinade ingredients.
  • Marinate chicken for 30 minutes.
  • While the chicken marinates, prepare the rest of the ingredients.
  • When chicken has marinated, brown in a heavy pot in vegetable oil.
  • After chicken is well browned, add the rest of the ingredients, EXCEPT the bell pepper and green onions.
  • Cover and simmer over medium heat for about 30 minutes, until potatoes are tender.
  • Add green onions and bell pepper, and cook for an additional 2 minutes.
  • Serve over hot white rice.

Whole chicken - 1 (Or just use 600-800 grams of chicken thigh/drumsticks)
Potato - 2 medium-sized (each potato, size of your palm)
Onion - 1 whole
Carrot - 1/4 a whole
Spring onion - 10-inch piece
Sugar - 3 Tablespoons
Minced garlic - 1 Tablespoon
Soy sauce - 1/3 cup
Korean red chili flakes - 1/4 cup (Add a bit more later - up to 1/3 cup - if needed)
Water - 2 cups
