Dak galbi is another spicy, stir-fried chicken dish that all Koreans seem to love. The main dish between this and other spicy dishes is the addition of cabbage and usually perilla leaves, giving it a distinct and satisfying aroma. There are many dak galbi restaurants/quasi-bars that set up a single, large frying pan in the center of the table for everyone to enjoy the meal together (Koreans literally love eating together). Serve with rice.

1 tablespoon vegetable oil
2 pounds skinless, boneless chicken breast halves, cut into bite-size pieces, or more as needed
¼ cup gochujang (Korean hot pepper paste)
2 tablespoons soy sauce
2 tablespoons gochugaru (Korean red pepper flakes)
1 tablespoon mirin (Japanese sweet wine)
1 tablespoon brown sugar
1 tablespoon sesame oil
4 cloves garlic, minced
¼ teaspoon ground black pepper
¼ teaspoon ground ginger
2 cups Korean-style glutinous rice cakes (tteok)
¼ large head cabbage, sliced into strips
1 sweet potato, sliced into rounds
½ onion, chopped
3 scallions, sliced into 1-inch pieces, divided
4 leaves perilla leaves, sliced, or to taste
½ cup water
1 tablespoon sesame seeds

Steps:

  • Heat oil in a large nonstick saucepan. Add chicken pieces; cook and stir until nearly opaque, 4 to 7 minutes.
  • Combine gochujang, soy sauce, gochugaru, mirin, brown sugar, sesame oil, garlic, black pepper, and ginger in a bowl. Add to the saucepan with the chicken. Cook and stir until chicken pieces are browned and well coated, 3 to 5 minutes.
  • Stir rice cakes, cabbage, sweet potato, and onion into the skillet with the chicken mixture. Cook until sweet potato changes color, about 10 minutes. Add 2 to 2 1/2 scallions and perilla leaves. Cook until wilted, about 3 minutes. Add more water if sauce seems to be drying up. Garnish with remaining scallions and sesame seeds.

The beloved Korean stir-fried chicken dish dakgalbi is spicy, sweet, aromatic, and comforting—and it comes together in a few easy steps and one pan.

¼ medium white onion
1 1" piece ginger
3 garlic cloves
5 Tbsp. gochujang (Korean hot pepper paste)
3 Tbsp. unseasoned rice wine or dry sherry
2 Tbsp. raw or light brown sugar
2 Tbsp. soy sauce
1 Tbsp. gochugaru (Korean red pepper powder)
1 tsp. mild Korean curry powder (preferably Ottogi; optional)
1 lb. skinless, boneless chicken thighs and/or chicken breasts
¼ small green cabbage
1 small sweet potato (about 4 oz.)
20 perilla, shiso, or Thai purple basil leaves, divided
18 fresh or frozen rice cakes, preferably cylindrical shaped
½ tsp. plus 3 Tbsp. extra-virgin olive oil or vegetable oil
Ssamjang and kimchi (for serving)
12 lettuce leaves (for serving)

Steps:

  • Make the marinade: Finely chop ¼ medium white onion. Peel one 1" piece ginger with a spoon. Smash 3 garlic cloves and remove skins. Slice ginger and garlic. Transfer to a blender and add 5 Tbsp. gochujang (Korean hot pepper paste), 3 Tbsp. unseasoned rice wine or dry sherry, 2 Tbsp. raw or light brown sugar, 2 Tbsp. soy sauce, 1 Tbsp. gochugaru (Korean red pepper powder), and 1 tsp. mild Korean curry powder (if using). Purée on high until a loose paste forms (this may take up to 2 minutes depending on your blender). Transfer marinade to a large bowl.
  • Cut 1 lb. skinless, boneless chicken thighs and/or chicken breasts into 1" cubes, add to marinade, and toss to coat. Cover bowl and chill at least 30 minutes and up to 36 hours.
  • Meanwhile, slice ¼ small green cabbage as thinly as possible. Peel 1 small sweet potato, halve lengthwise, then slice crosswise into ¼"-thick half-moons. Trim stems from 8 perilla, shiso, or Thai purple basil leaves, then cut leaves into quarters.
  • If using fresh rice cakes, place 18 rice cakes in a large bowl and pour in water to cover. Soak until rice cakes are soft, 7–10 minutes. Drain well in a colander. If using frozen rice cakes, bring a large saucepan or small pot of water to a boil and drop 18 rice cakes into pot, stirring constantly to make sure they don’t stick together. Cook 1 minute, then drain well in a colander. Drizzle ½ tsp. extra-virgin olive oil or vegetable oil over rice cakes and toss to coat (this will prevent them from sticking together).
  • Heat remaining 3 Tbsp. extra-virgin olive oil or vegetable oil a large skillet over medium. Combine chicken and any remaining marinade, cabbage, sweet potato, and rice cakes in skillet and cook, stirring often, until chicken is cooked through and sweet potato is tender, 15–17 minutes. Add quartered perilla leaves and cook, stirring, until slightly wilted, about 30 seconds.
  • Dakgalbi is usually eaten as ssäm-style: To assemble one, place one of the remaining 12 perilla, shiso, or Thai basil leaves on top of one of the 12 lettuce leaves, then top with a small dollop of ssamjang, kimchi, and using chopsticks, add a piece of chicken, sweet potato, and rice cake for the perfect bite—or create ssäm to your preference!

  • To Prep Combine all the sauce ingredients in a bowl and add to chicken pieces. Mix well, and set aside in the fridge for at least 30 mins. To Cook Add oil to a heated non- stick frying pan/ skillet and add the marinated chicken pieces. Cook the chicken over medium heat for about 7 mins, taking care not to burn the chicken. For people familiar with this, you will know that you are not completely finished with the meal when the pan is empty, but rather an ajumma (or waitress) will add some rice and other ingredients to make delicious bokkeum bab (fried rice combinations).
