Creamy Harissa Chicken Cutlets Recipe | EatingWell image

These spicy chicken cutlets are already wicked fast to make but to shave off even more time, skip cleaning and slicing whole kale leaves and stir in a bag of chopped kale instead. (You may just need to cook it a couple minutes longer.)

4 chicken cutlets (about 1 pound)
¼ teaspoon salt, divided
¼ teaspoon ground pepper, divided
1 tablespoon extra-virgin olive oil
3 tablespoons harissa sauce or paste (see Tip)
3 cloves garlic, minced
½ cup dry white wine
½ cup heavy cream
4 cups thinly sliced kale

Steps:

  • Sprinkle chicken with 1/8 teaspoon each salt and pepper. Heat oil in a large skillet over medium-high heat. Add the chicken and cook, turning once, until browned and an instant-read thermometer inserted in the thickest part registers 165°F, about 6 minutes. Transfer to a plate.
  • Add harissa and garlic to the pan. Cook, stirring, for 1 minute. Add wine and cook, scraping up any browned bits, until the liquid has mostly evaporated, about 2 minutes. Reduce heat to medium and stir in cream, any accumulated juices from the chicken and the remaining 1/8 teaspoon each salt and pepper. Simmer for 2 minutes. Stir in kale. Return the chicken to the pan and turn to coat with the sauce.

I'm on a mission to slenderize some of my favorite foods. (ok so that I can slenderize myself too!) This is my own adaptation of something I saw on the Food Channel recently with Juan Carlos Cruz.

Prep Time 10 minutes

Cook Time 20 minutes

Yield 3 serving(s)

Number Of Ingredients 8

6 chicken breast tenders
1 whole egg
1 egg white
1 tablespoon water
1 cup Italian seasoned breadcrumbs
1 tablespoon locatelli cheese, grated
1 tablespoon fresh parsley, minced
nonstick cooking spray

Steps:

  • Pre-heat oven to 425 degrees.
  • Beat the egg and white together with the water well.
  • Mix well the bread crumbs, cheese, and parsely.
  • Line a cookie sheet with aluminum foil and lightly spray the surface.
  • Dip the chicken into the egg mixture, then dredge into the breadcrumb mixture so that it's well coated.
  • Place on cookie sheet. When all the chicken pieces are coated, lightly spray with the non-stick cooking spray.
  • Bake for about 20 minutes until just cooked through. (these will dry easily so try not to overcook).
