Easy Make-Ahead Mashed Potatoes Recipe | Land O’Lakes image

Prepare the potatoes one day ahead of time to ease meal preparation.

Potatoes
8 cups (about 4 pounds) peeled potatoes, cut into 1-inch pieces
2 teaspoons salt
3/4 cup milk
1/2 cup Land O Lakes® Butter softened
3 ounces cream cheese, softened, cut into chunks
Salt
Pepper
Garnish
Paprika, if desired
Chopped fresh parsley, if desired

Steps:

  • Place potatoes in 4-quart saucepan. Cover with water; add 2 teaspoons salt. Bring to a boil over high heat. Reduce heat to medium. Cook potatoes 15-18 minutes or until fork tender. Drain.
  • Place hot, cooked potatoes in bowl. Add 1/4 cup milk, butter, and cream cheese; mash with potato masher or beat with hand mixer until smooth. Add salt and pepper to taste. Place potatoes in 3-quart casserole. Cover; refrigerate 4 hours or overnight.
  • Heat oven to 325°F.
  • Pour remaining 1/2 cup milk over potatoes. Cover; bake 30 minutes. Stir. Cover; continue baking 30-40 minutes or until heated through. Sprinkle with paprika and chopped parsley, if desired.

8 pounds potatoes, peeled and thinly sliced
2 large onions, thinly sliced
1/3 cup all-purpose flour
2 cans (10-3/4 ounces each) condensed cream of chicken soup, undiluted
2-2/3 cups whole milk
Salt and pepper to taste
2 cups shredded cheddar cheese

Steps:

  • In two greased 13x9-in. baking dishes, layer potatoes and onions. Combine the flour, soup and milk until blended; pour over each baking dish. Season with salt and pepper. Cover and bake at 325° for 1-1/4 to 1-1/2 hours or until potatoes are tender. Uncover; cool for 30 minutes. Cover and refrigerate overnight. Remove from refrigerator 30 minutes before reheating. Bake at 325° for 30-40 minutes. Uncover and sprinkle with cheese; bake 5 minutes longer or until cheese is melted.
