EGG CUSTARD TARTS RECIPE - BBC FOOD



Egg custard tarts recipe - BBC Food image

The slightly nutty short-crust pastry makes the perfect crumbly case for a rich egg custard topped with nutmeg. Go on have another! Equipment and preparation: You will need a 12-hole muffin tray and a 11cm/4½in fluted cutter.

Number Of Ingredients 9

165g/5¾oz plain flour, plus extra for dusting
25g/1oz ground almonds
120g/4¼oz chilled unsalted butter, cubed
55g/2oz caster sugar
1 free-range egg
700ml/1¼ pint full-fat milk
7 free-range egg yolks
90g/3¼oz caster sugar
freshly ground nutmeg

Steps:

  • To make the pastry, stir the flour and ground almonds together in a large bowl, then add the butter and rub in with your fingertips until the mixture resembles breadcrumbs. Stir in the sugar.
  • Break in the egg and work it into the mixture with your fingers, bringing it together to form a soft dough.
  • Tip the dough onto a lightly floured work surface and shape it into a ball. Flatten with your fingers to a disc and wrap in cling film. Leave to chill in the fridge for 30 minutes.
  • Preheat the oven to 200C/400F/Gas 6.
  • Roll out the sweet pastry on a lightly floured work surface.
  • Using an 11cm/4½in fluted cutter, cut out twelve discs and line the muffin tray moulds with the pastry circle. The pastry should overlap the top of the moulds by a few millimetres, so that you can crimp the edges if you wish.
  • For the custard filling, warm the milk in a saucepan, and beat the egg yolks and sugar together in a separate bowl until pale and creamy.
  • Pour the milk onto the egg yolk mixture and stir well, creating little bubbles.
  • Transfer the custard mixture into a pouring jug with a lip, then fill each of the tart cases.
  • Sprinkle a small pinch of ground nutmeg into the middle of each tart.
  • Bake the tarts in the oven for about 25 minutes - you may need to turn the temperature down to 180C/350F/Gas 4 for the final 10 minutes. You are looking for a very slight dome on the custard, indicating that it is baked. If the custard domes too much this indicates that you have over-cooked the custard, it will have boiled, and will sink back down leaving a big dip. If this does happen you can help rescue it by removing the tarts from the oven immediately and placing the tin in cold water on a cold surface.
  • Cool in the tin for 30 minutes and then carefully remove from the moulds. The base of the tarts should be perfectly baked through, without having over-cooked the custard filling.

A great family favourite as pudding to follow a weekend lunch. I have to admit, the recipe is not economical – just delicious! Ideally use a rectangular dish simply because the bread fits it better. If you are not keen on sultanas, just leave them out.

Provided by Mary Berry

Yield Serves 6-8

Number Of Ingredients 10

150g/5oz mixed sultanas and raisins
75g/3oz caster sugar
1 lemon or orange, finely grated zest
½ tsp mixed spice
8 thin slices white bread, crusts removed
100g/4oz butter, melted
2 free-range eggs
300ml/½ pint double cream
150ml/¼ pint milk
2 tbsp demerara sugar

Steps:

  • You will need an ovenproof dish about 2½-3 pint/1.4-1.7 litres volume (18 x 23 x 5 cm/7 x 9 x 2 in).
  • Preheat the oven to 180C/350F/Gas 4 and use some of the melted butter to grease the dish.
  • Combine the dried fruit, sugar, lemon zest and spice together in a bowl and toss to mix well.
  • Cut each bread slice into three strips. Take sufficient slices to cover the base of the dish and dip one side of each one in melted butter. Lay them in the dish, buttered-side down. Sprinkle with half the dried fruit mixture. Repeat the layering, laying the bread strips buttered-side up. Lay the third and final layer of bread strips on top, buttered-side up.
  • For the custard, beat together the eggs, cream and milk in a bowl and pour it over the pudding. Sprinkle with demerara sugar, and then leave to stand for about one hour if time allows.
  • Bake for about 30-40 minutes, or until the top is golden-brown and crisp and the pudding slightly puffed up. Serve hot, or there are some who insist that it is delicious cold!

Continue to whisk until the mixture has boiled and thickened. Remove from the heat, add the sugar and egg yolks and whisk again. Pour into the pastry case and place in the fridge to chill.

    Meanwhile, make the meringue topping. Place the egg whites in a large bowl and whisk using an electric whisk, until stiff. Add the sugar a little at a time, whisking on full speed, until you have a shiny, glossy meringue. Spoon into a piping bag fitted with a plain 1½cm (⅝in) nozzle and pipe even blobs over the surface of the chilled custard in a neat pattern. If you don’t have a piping bag, you can use two dessertspoons.

    Bake in the oven for 35–40 minutes, until pale golden on top and firm to touch. Leave to cool in the tin for 15 minutes before removing from the tin. Serve warm with pouring cream.

    Mary’s tips:

    Can be made up to 8 hours ahead and reheated gently to serve.

    Not for freezing.

    Do not serve the pie hot, as the filling may be a bit soft and will spill out of the pastry case.
